Once opened, a bottle of sparkling wine keeps for 24 to 48 hours in the refrigerator with a hermetic stopper or a Champagne cork. For Champagne, the spoon-in-the-neck trick is a myth, residual pressure and cold temperature are enough to preserve the bubbles if the bottle is properly resealed.
