From London to Provence: a story of passion and a return to one's roots
It all begins in London, where the family lived for fourteen years. The British capital offered plenty of cultural and professional riches, but it could never replace what only France knows how to give: good food, a glass of wine as evening falls, and that breath of the Midi reminding you that life can taste of terroir.
The long-cherished dream of owning a vineyard became reality with the purchase of an old 18th-century mas surrounded by 5 hectares of vines in AOP Ventoux, in Saint-Didier, at the foot of the legendary Mont Ventoux. The mas was almost in ruins? three years of renovation with local craftsmen gave it back its soul. The vineyard, for its part, had already been farmed organically for ten years. Fertile ground, in every sense of the word.
And then there is Bonbon. The white cat who runs the house, who shares in the joys and the sorrows, and who holds a place all her own in this family. It was she who inspired the estate's name, its logo, and the idea that behind every bottle of Chat Blanc there is someone, and something, authentic.

Saint-Didier holds a remarkable position in the Provençal wine landscape: wedged between Mont Ventoux and the Vaucluse mountains, the village enjoys a microclimate shaped by the Mistral. This wind, often feared, is here a precious ally, it naturally dries the vines, limits disease and avoids preventive treatments. The winemaking and ageing process aims to limit all inputs. The only concession: a minimal addition of sulphur, just 20% of the amount permitted in organic farming, to guarantee stability and hygiene without ever compromising the natural expression of the terroir.
Low yields, great concentration
Yields are deliberately kept in check: 35 hl/ha for the red, 40 hl/ha for the rosé. These choices ensure beautiful aromatic concentration and naturally supple tannins, with no need to force the matter in the cellar.
