The soil is not very deep and the sub-soil is formed of sandstone. The place called the Vigne de Mauzac, which was chosen to make this wine is Sarrabelle..."the essence of the legend" Age of the vines 31 years. The grape variety 100% Mauzac rosé and Mauzac blanc (Gaillacois varieties) Vinification The grape, harvested into crates and pressed directly, provides a fairly lively juice, and a little sweet, which alread expresses the character of the grape variety. The end of the fermentation process is blocked with residual sugar. The wine, which is stabilised with tartar, will be bottled with yeasts, which will be removed during the disgorgement at the end of wine-making process.
