Bonus: our gravlax recipe
Gravlax is made ahead and needs no cooking, only resting time in the fridge. Choose an extra-fresh salmon, meant to be eaten raw.
Ingredients (serves 4)
- 600 g of extra-fresh salmon fillet, skin on
- 40 g of coarse salt
- 30 g of sugar
- 1 bunch of fresh dill
- 1 teaspoon of crushed pepper
- For the sauce: 2 tablespoons of mustard, 1 teaspoon of sugar, 1 tablespoon of vinegar, 6 tablespoons of oil, chopped dill
Preparation
Mix the coarse salt, sugar and pepper. Lay the fillet skin-side down in a dish, cover the flesh with this mix, then with roughly chopped dill.
Cover with cling film pressed to the surface, set a weight on top and let it cure in the fridge for 24 to 48 hours, turning the fillet once halfway through.
Rinse quickly, pat dry, then slice thinly on the bias, without the skin. Serve cold with the oil-emulsified mustard-dill sauce.
