Yeast, Sulfites and Approved Additives in Organic Sparkling Wine
Whether Crémant, Champagne or pét-nat, organic sparkling wine follows Regulation (EU) 2018/848 right through to the bubbles. It must be made from organic raw materials, and every product added in the winery comes from a closed list set by Implementing Regulation (EU) 2021/1165.
To start the second fermentation, the producer may add wine yeast. The rule applies strain by strain: the organic version is required when it is available, and conventional yeast is allowed otherwise. If the producer adds fresh lees, they must come from organic production.
Sulfite limits work differently than for still wine, where the cap rises with sugar. For sparkling wine, it depends on the category: 155 mg/L for organic quality sparkling wine and 205 mg/L for other sparkling wine, 30 mg/L below conventional limits. An appellation may set a lower one.
The organic list includes tartaric acid, bentonite and tannins, the latter organic where available. Some processes stay banned, such as partial concentration by chilling or physical removal of sulfites.
Organic Sparkling Wine: Vineyard Treatments, Method and Dosage
How are the vines for organic sparkling wine protected?
Vines grown for organic sparkling wine can only be protected with substances from an EU list, set by Implementing Regulation (EU) 2021/1165. It includes copper, sulfur, calcium polysulfide, paraffin oils and plant-derived pyrethrins. They may be used only when preventive measures fall short.
Can organic sparkling wine get its bubbles in a tank?
Organic sparkling wine can get its bubbles in a sealed tank or in the bottle, since the EU organic rules don’t require either method. They govern what goes into the wine, whatever vessel holds the second fermentation. An appellation can, however, require bottle fermentation, as Champagne and Crémant do.
Can organic sparkling wine be medium dry?
Organic sparkling wine can be brut nature, extra brut, brut, medium dry (demi-sec) or sweet (doux), because the EU organic rules set no sugar level. These terms follow the thresholds in Regulation (EU) 2019/33, as for any sparkling wine.
Where can you buy organic sparkling wines direct from the winemaker?
You can buy organic sparkling wines direct from the winemaker on Avenue des Vins. Each wine’s page names the producer who made it.
