Grape varieties:: minimum 65% Chardonnay, plus a blend of Pinot Noir, Molette, Aligoté Terroir: Clay-limestone soil Characteristics: This wine, produced using traditional vinification methods, is a quality sparkling wine with all the features of the greatest bubblies. The blending of the different grape varieties gives this sparkling wine aromas of fruit and flowers as well as a pleasant freshness. After direct pressing, the must is put into vats for alcoholic fermentation. The blending of the different grape varieties is carried out and then the bottle fermentation is carried out with the addition of liqueur de tirage (yeast and sugar). The bottles are then laid horizontally on slats for the "prise de mousse" (or second fermentation) for a period of 2 to 3 years. Then the bottles are riddled and disgorged (to remove the dead yeasts).At this stage, we don not add any spirits of old wines or aromas, the aim being to retain the quality that we obtain by leaving our bottles to age on the lees. The minimum 24 months of ageing involved in this traditional method produce a dry sparkling wine, without acidity at the finish, that expresses all the quality of the base wines that we produce and age at the domaine. The bottles are now ready to be sold. Storage period: no maximum, but there's no pint in leaving disgorged bottles to age. Alcohol by volume: 12.5% vol Serving temperature: 6° to 8° C
