Let's eat !
Which wine to pair with a poultry ballotine ?
With its careful presentation, elegant slicing, and indulgent stuffing, a poultry ballotine often stands out as a top-choice main course, whether in summer with seasonal vegetables or at a festive year-end meal.
Our Selection Wine and Poultry
This traditional gastronomic specialty is based on poultry that is rolled and trussed, then gently cooked to obtain tender, juicy meat. Depending on the type of poultry and the breed (chicken, poularde, capon, turkey, guinea fowl), and depending on the stuffing (foie gras, mushrooms, truffles, cheese, vegetables), the wine choice changes completely. The goal of a good food-and-wine pairing is to respect the finesse of the meat while accompanying the sauce and the stuffing. Here are all our secrets for successfully pairing wine with a ballotine, along with our recommended wines!
What wine should you drink with a poultry ballotine?
Ballotine is a dish that can be made in endless variations. The cooking method, stuffing, sauce, and side dish all play an important role in choosing the wine. While in most cases a white wine remains the simplest solution, a light red, a rosé, or a sweet wine can create a perfect pairing depending on the recipe.
What white wine should you drink with a poultry ballotine?
White wines are often the easiest to pair with poultry, because they respect the finesse of the meat and pair very well with cream sauces, mushrooms, or morels. Aim for a dry, balanced white with freshness, and more or less roundness depending on the sauce.
Our tips: white wine and ballotine
- Favor Chardonnay-based white Burgundies if the sauce is creamy or slightly reduced. An AOC Côtes de Beaune is very well suited to mushroom sauces and short jus.
- A non-ouillé Jura white if the recipe leans toward a vin jaune sauce or a morel sauce
- A dry, aromatic Alsace Riesling if the stuffing includes herbs, shallots, or a smoky touch
- For a very indulgent foie gras ballotine, dare to serve aSauternes for an elegant, festive sweet-and-savory pairing!
What red wine should you drink with a poultry ballotine?
A red wine can pair with a poultry ballotine, as long as it is not too tannic. Poultry suits supple, lightly extracted reds, especially if the stuffing contains mushrooms or sausage meat, or if the sauce is made with red wine.
Our tips: red wines and ballotine
- A Pinot Noir is perfect for its finesse and freshness, ideal with simple, elegant sauces
- For a simple recipe, an AOC Beaujolais based on Gamay—generous and easy to drink
- In Bordeaux, favor a supple red dominated by Merlot rather than a Cabernet Sauvignon with powerful tannins
What rosé wine should you drink with a poultry ballotine?
Rosé is less classic but can be very relevant if the ballotine is served in summer, or if the stuffing is slightly spicy. Choose a dry rosé with freshness and enough structure to stand up to the sauce.
Our tips: rosé and ballotine
- A gastronomic dry rosé with a chorizo stuffing
- A more delicate rosé in AOC Coteaux d’Aix-en-Provence if the sauce is light, with olive oil and herbs
What are the best food-and-wine pairings with poultry ballotines?
What wine with a poultry ballotine in vin jaune?
This recipe, often served with morels, is very rich in flavor and calls for structured, complex white wines.
- A Jura vin jaune, ideal for extending the nutty and spicy flavors
- A Burgundy Chardonnay if you want a softer alternative
What wine with a foie gras poultry ballotine?
With foie gras, the sauce gains roundness and complexity. The wine must follow without overpowering the poultry’s finesse.
- A full-bodied Burgundy white in AOC Côtes de Beaune
- A “festive” option: a glass of Sauternes, especially if the ballotine is served as a starter at a Christmas meal
- If you prefer red, a very delicate Pinot Noir is a great alternative
What wine with a poultry ballotine with asparagus and morels?
Morels call for structured whites that can follow a cream sauce and reduced jus. Asparagus also requires precision and freshness.
- A lightly oaked Burgundy Chardonnay is particularly well suited
- A Jura wine based on Savagnin if the sauce leans toward morels and a richer base
- A Sauvignon Blanc in AOC Sancerre if the recipe is more herbaceous and light
What wine with a chorizo and mozzarella ballotine?
With a spicier, more summery stuffing, a generous red or a gastronomic dry rosé is often the best choice.
- Beaujolais Gamay for fruit and drinkability
- A supple Bordeaux red dominated by Merlot
- A dry Provence rosé if you are looking for more freshness
Bonus: our chicken ballotines with forest mushroom sauce
These chicken ballotines with a forest mushroom sauce turn simple chicken fillets into an elegant dish that highlights the woodland flavors of mushrooms.
Ingredients (serves 4)
- 4 chicken fillets
- 1 egg white
- 150 g mixed forest mushrooms (including chanterelles if possible)
- 100 g smoked bacon lardons
- 2 shallots
- 20 cl cream
- 20 cl thickened veal stock
- Olive oil, salt, pepper
- Parsley
- For serving: potato cake or sweet potato purée
Method
- Chop the mushrooms duxelles-style and sauté them with the shallots and lardons.
- Flatten the fillets, fill with the stuffing, roll and truss for neat, even poultry.
- Sear briefly, then finish with low-temperature cooking to keep the meat tender.
- Deglaze with the thickened veal stock, add the cream, then reduce to a sauce with forest flavors.
- Serve with parsley and the side dish of your choice.
Poultry ballotine is a dish that lends itself to many recipes, from the most traditional to the most creative, which makes choosing the wine exciting. To succeed with your pairing, a dry white wine remains the most solid option, but depending on the stuffing and sauce, you can also try certain red wines or rosés.
