What food goes with Chablis? Our pairings, appellation by appellation
With a Chablis, serve oysters, scallops, fish in a cream sauce or chicken with lemon: its straight acidity and saline finish lift the dish instead of covering it. The appellation level does the rest.
Chablis is a Chardonnay from northern Burgundy, dry, taut, rarely marked by oak. It is a wine that accompanies rather than dominates, so its place at the table is wide, provided you respect two limits.
The first is the weight of the dish, since a heavy jus or a rare red meat flattens the finish. The second is the appellation level, from Petit Chablis to Grand Cru, which changes the scale of the pairing. Here is how to choose, dish by dish.
What fish and seafood go with Chablis?
Raw shellfish is the safest pairing, and Petit Chablis serves it best, because its iodine notes answer the sea water instead of fighting it.
Oysters, mussels and tartares
With plain oysters, a plate of mussels or a fish tartare, stay on a Petit Chablis served at 8 °C, and raw or grilled prawns will work just as well. It is also the local aperitif wine, the bottle opened over gougères before sitting down.
Scallops, lobster and shellfish in sauce
As soon as a sauce arrives, move up a level: warm oysters, sea urchin, stuffed crab, crayfish in cream or grilled lobster call for the aromatic richness of a Chablis Premier Cru. Scallops follow the same rule, a Chablis being enough for a tartare while the Premier Cru holds the butter and cream of a pan-seared version.
White fish, oily fish and smoked fish
Sole meunière, roast sea bass or steamed cod are happy with a straight Chablis, whose tension cuts the butter without weighing down the flesh. Oily fish, on the other hand, call for a Premier Cru.
Salmon, tuna, pike and pike-perch in sauce find a partner of their own size there. Smoked fish handles this minerality very well, meaning the saline, chalky sensation that the limestone soil leaves in the glass.
What white meats and poultry go with Chablis?
Yes, Chablis works with meat, as long as it is white and served with a pale sauce. It is one of the easiest pairings in the appellation.
Poultry with cream or lemon
Roast chicken with lemon, poultry in a cream sauce or a Bresse capon call for a Chablis Premier Cru, which balances the sauce and refreshes the palate between bites. With truffled poultry, a Premier Cru of around ten years shows its full range.
Blanquette de veau and ham
Blanquette de veau, with its creamed stock and its lemon, is a Chablis classic. Cooked ham opens the door to the local speciality covered further down.
What cheeses go with Chablis?
Fresh goat cheeses and pressed cheeses, without hesitation, because Chablis is one of the few whites that crosses a whole board without being flattened.
Goat cheese, Comté and Chaource
A dry goat cheese from the Yonne, an aged Comté, a Beaufort or a creamy Chaource all work, while cooked cheeses such as gouda are happy with a Petit Chablis. Our selection of white wines and cheese covers the rest of the board.

Does Chablis work with Asian or spicy food?
Yes for Japan, with caution for hot dishes, since the dividing line is chilli rather than distance.
Sushi, sashimi and Japanese food
Sushi, sashimi, tempura and fried tofu call for a Chablis Premier Cru, because vinegared rice and raw fish look for exactly the freshness this wine brings.
Thai and Indian: how far to go
A mild curry, a lemongrass soup or a lightly spiced dish are no problem, but beyond that the chilli dries the wine out and breaks the pairing. Serve it a little cooler then, around 9 °C, to soften the blow.
What local Burgundy dishes go with Chablis?
The specialities of the Yonne remain the truest pairings, and the least known outside the region, because they were built around this wine rather than the other way round.
Snails, andouillette, œufs en meurette and jambon persillé
Burgundy snails and œufs en meurette absorb the garlic and butter thanks to the freshness of the wine. Chablis andouillette asks for a Premier Cru of six to eight years, the age at which the wine has gained some roundness.
Jambon persillé and jambon à la chablisienne complete the list. For the latter, growers in the appellation give a simple marker: a Chablis of three to five years.
What are the best food pairings with Chablis?
Everything comes down to the appellation level and the serving temperature. Here is the reference to keep in mind when you pick the bottle.
Petit Chablis: oysters, mussels, tartares, prawns, summer salads, quiche, aperitif with gougères. At 8 °C as an aperitif, 9 to 10 °C at the table.
Chablis: white fish, poultry, goat and pressed cheeses, snails, andouillette, jambon à la chablisienne. Between 10 and 11 °C.
Chablis Premier Cru: warm oysters, scallops, shellfish in sauce, oily fish, sushi, blanquette de veau. Between 10 and 11 °C.
Chablis Grand Cru: foie gras, fine fish in sauce, truffled poultry. Between 12 and 14 °C.
A young wine gains from thirty minutes in a decanter before serving. For the rest, our guide to the wines of Chablis covers the four appellations and their terroirs.
Bonus: our jambon à la chablisienne recipe
This is the dish that carries the name of the wine, created in the first half of the 20th century by a local restaurateur, Charles Bergerand. It is served with rice.
Ingredients (serves 4)
- 8 thick slices of bone-in cooked ham
- 4 shallots
- 300 ml Chablis
- 200 ml thick crème fraîche
- 2 tablespoons crushed tomatoes
- 30 g butter and 30 g flour
- 1 sprig of tarragon, salt, pepper
Method
Sweat the chopped shallots in butter without colouring them, then pour in the Chablis with the tarragon and reduce by half over high heat.
Scatter in the flour, stir, add the cream and the crushed tomatoes, then let it thicken for ten minutes over low heat before adjusting the seasoning.
Roll the ham slices, arrange them in a dish, cover with the sauce and bake for twenty minutes at 180 °C. Serve hot, with the same Chablis in the glasses.
Why buy direct from the winemaker? The Chablis sold on Avenue des Vins leave the estate's own cellar, with no middleman adding a margin: you pay the cellar-door price, you know which vintage is on its way, and you support independent growers in the Yonne.
Chablis is not a special-occasion wine kept for grand tables. It is a mealtime white, which only asks that you match the appellation level to the richness of the dish.
Start with Petit Chablis on shellfish, keep the Premier Cru for sauces and oily fish, save the Grand Cru for foie gras: with those three markers, you will rarely go wrong.

Frequently asked questions about Chablis pairings
Can you drink Chablis with red meat?
It is not advisable. Chablis is a dry white with no tannin to answer a rare red meat: the wine reads thin and the meat reads heavy. Stay with white meats, poultry and fish.
Petit Chablis or Premier Cru with a seafood platter?
A Petit Chablis if the platter is served raw, a Premier Cru as soon as there is cooked shellfish, stuffed crab or mayonnaise. Cooking and sauce add fat, which asks for more substance in the glass.
Should you decant a Chablis before the meal?
With a young wine, yes: thirty minutes in a decanter is enough to open it before serving. A ten-year-old Premier Cru goes straight from the bottle. Use a stemmed, tulip-shaped glass and do not fill it to the top.
How long can you keep a Chablis before serving it?
A Petit Chablis is best drunk within two years, a Chablis is good young but holds five years and more, and a Premier Cru shows best between its fifth and tenth year. With Chablis andouillette, aim for a Premier Cru of six to eight years.
Why buy your wine directly from the winemaker?
Because the bottle leaves the estate's cellar with no middleman margin to carry. You buy at the cellar-door price, you know which vintage is shipped, and the grower keeps the full value of the sale.
