What Wine to Pair with Veal Kidneys?

For enthusiasts of traditional French cuisine, veal kidneys are a true delight! Fortunately, in addition to being delicious, veal kidneys are also quite affordable. To fully enjoy this classic of French gastronomy, it’s essential to pair it with a good bottle of wine that will bring out its flavors. Don’t worry, we’ll explain everything in this guide! Follow our advice and discover which types of wines and appellations to choose for the best wine pairings with veal kidneys, depending on your recipe.

What Wine to Drink with Veal Kidneys?

First, what are veal kidneys? Contrary to some misconceptions, veal kidneys are not the calf’s testicles, but rather the kidneys of the animal. In cooking, this highly flavorful dish with a crispy texture comes in various recipes. Veal kidneys with Madeira sauce, veal kidneys with mustard sauce, veal kidneys in persillade, or veal kidneys with Porto are all recipes that highlight this delicacy. When it comes to cooking, some prefer them well-cooked and cut into small pieces, while others prefer them medium-rare and usually cut into larger chunks.

With their strong flavor and firm texture, veal kidneys need to be paired with a wine that can stand up to them! However, the recipe and sauce are factors to consider when aiming for the perfect wine pairing. While the aromas of veal kidneys often call for a bold red wine, some sauces made with cream might lead us to consider a white wine with slightly oxidative flavors. Indeed, tannins in red wine may clash with the creamy “lactic” aspect of the sauce. For red wines, Loire wines based on Cabernet Franc, Burgundy, or some spicy reds from the Rhône Valley or Southwest are recommended. If opting for white wine, a daring pairing with a Jura white made from Savagnin aged in an oxidative environment (similar to a yellow wine, but for a shorter duration) would be impressive!

The Guide to the Best Wine Pairings with Veal Kidneys

• For a pairing with veal kidneys in persillade or simply pan-fried and served medium-rare with mushrooms, turn to a bottle of powerful and spicy red wine from an AOC Cahors domain. After a few years of aging, Cahors wines reveal complex notes of black fruits, spices, and undergrowth wrapped in velvety and concentrated tannins. Perfect to accompany your kidneys!

• For pairing with veal kidneys in mustard sauce, try a bottle of Jura white made from Savagnin, or even a Vin Jaune for those who love this style. These wines, with their intense aromas of nuts, green apple, hazelnut, and spices, and lively palate, will complement the flavors of veal kidneys without being overwhelmed by the tangy character of the mustard.

• Finally, if you’re serving traditional veal kidneys with Madeira sauce, opt for a bottle of slightly aged red wine from the Loire, such as an AOC Chinon or AOC Bourgueil. With its Loire-like freshness, and notes of red fruits, undergrowth, and violet, it will work wonders with this wine pairing.

FAQ - Wine and veal kidneys

Red or white wine with veal kidneys?

Both work depending on the sauce. A characterful red suits pan-fried kidneys or persillade, while a cream sauce pairs better with a Jura white showing oxidative notes.

Which wine goes with veal kidneys in mustard sauce?

A Jura white made from Savagnin stands up to the tangy mustard. Its aromas of nuts and green apple and its lively palate balance the dish without fading.

What wine suits veal kidneys with Madeira sauce?

A slightly aged Loire red, from the Chinon or Bourgueil appellation, works well. Its freshness and notes of red fruit and undergrowth answer the depth of the Madeira sauce.

Which bold red appellation pairs best with this dish?

A Cahors with a few years of ageing brings velvety tannins and notes of black fruit, spice and undergrowth. It supports the strong flavour and firm texture of the kidneys.

At what temperature should the wine be served with veal kidneys?

A characterful red is best served around 16 to 17 °C to soften its tannins. A Jura white shows better near 10 to 12 °C, keeping its aromatic freshness intact.
