Brut, Demi-Sec or Doux: Reading the Sugar Level on the Label
When you pour sparkling wine with dessert, one rule holds almost every time: the wine should be at least as sweet as the plate. Next to a cake sweeter than itself, a low-sugar sparkling wine suddenly tastes sharp and thin. That is why a brut, so easy to enjoy as an aperitif, often struggles with meringue or a caramel dessert. Tart fruit narrows the gap: a strawberry tart handles a brut better.
Sparkling wines state their sugar level on the label, using terms set by EU Regulation 2019/33: brut nature (under 3 g/L), extra brut (0 to 6 g/L), brut (under 12 g/L), extra dry (12 to 17 g/L), sec or dry (17 to 32 g/L), demi-sec or medium dry (32 to 50 g/L) and doux or sweet (over 50 g/L). So on a bottle of bubbles, extra dry and dry are both sweeter than brut.
Some styles follow this rule on their own. Clairette de Die made by the méthode dioise ancestrale, from at least 75% Muscat à Petits Grains, gets its bubbles in the bottle from the grape’s own sugar, with no added liqueur. It stays fruity and often low in alcohol. In Piedmont, Moscato d’Asti, also made from white Muscat, is gently fizzy. A demi-sec Champagne, or a rarer demi-sec Crémant, rounds out the sweet sparkling wines.
Sparkling Wine and Dessert: Frequently Asked Questions
What sparkling wine goes with a bûche de Noël?
With a buttercream or meringue bûche de Noël (Yule log), a demi-sec or sweet sparkling wine usually works better than a brut. For a frozen fruit Yule log, a Moscato d’Asti stays light. For a chocolate log, our wine and chocolate pairing guide goes through the options.
What sparkling wine pairs with macarons?
With macarons, choose a sweet or demi-sec sparkling wine, since the almond shells and fillings are very sweet. As a rule, Moscato d’Asti suits fruity flavors such as raspberry or lemon, and demi-sec Champagne suits richer ones like vanilla or salted caramel.
What temperature should sparkling wine be served at with dessert?
Serve sparkling wine with dessert well chilled, at 43 to 46°F (6 to 8°C), to keep the bubbles fine and the sweetness fresh. Allow about three hours in the fridge, or around 20 minutes in an ice bucket filled with water and ice.
Which desserts go with brut Champagne?
Brut Champagne works best with desserts low in sugar: plain strawberries, citrus salad, butter shortbread or a thin apple tart. Once cream, caramel or meringue take over, switch to a demi-sec or a doux.
