Cuvée Confidentielle, aged in a cellar for 7 to 8 years, this exceptional champagne will delight your taste buds during meals. Appearance; : Gilded, luminous. Fine and festive bubbles. Dynamic and refined effervescence. Nose : Particularly well-rounded and pleasant, this may be thanks to the long period between disgorgement and shipping (the sample tasted was disgorged in February 2012). Great maturity with warm aromas of honey, beeswax and caramel, obtained through lengthy ageing on bottle racks before disgorgement (7 years), allowing for patient yeast autolysis and the development of bubbles. Delicate citrus flavours, alongside apple, pear grape and dry apricot, so typical of Chardonnay (50%). Nuances of red-fruit jam (blackcurrant, strawberry and raspberry) accompanied by kirsch and prune, an expression of the 45% Pinot Noir and 5% Pinot Menuier. Palate : A vibrant attack owing to the careful selection of the first juices, more acidic, when pressing the grapes (Cœur de Cuvée), sustained by a striking minerality so characteristic of most Cumières terroirs (classed Premier Cru) and Oeuilly terroirs. In the mouth it then reveals a dense and ample presence, opening into a warm finish, strengthened by well-adjusted dosing, with 7g/l of sugar added upon disgorgement and thanks to the meticulous camalolactic fermentation of the base wines. A slightly spicey fnish (pepper and cinnamon). Good length in the mouth.
