In the Champagne region, several grape varieties and typical appellations are essential for the production of exceptional champagnes. For example, Chardonnay, a white grape variety, is renowned for its finesse and freshness, bringing floral and fruity aromas to Blanc de Blancs cuvées. Pinot Noir, a black grape variety, gives champagnes structure and richness, with red fruit aromas and beautiful amplitude. Pinot Meunier, meanwhile, is often used to bring roundness and suppleness, with fruity and slightly spiced notes.

These three approaches share a common foundation, respect for living ecosystems and the rejection of chemical inputs — but differ in their degree of rigour and philosophy.
Organic champagne is made from grapes grown under certified organic farming (AB), without pesticides, herbicides or synthetic fertilisers. In the winery, inputs are strictly regulated by the European organic framework. It is the most widespread and accessible certification for committed growers.
Natural champagne goes further in the winery: zero dosage (no added sugar), without or with very little added sulphur (SO₂), using natural indigenous yeasts rather than laboratory yeasts. The result is a living, expressive champagne, sometimes surprising, that faithfully reflects the vintage and the terroir without any corrective intervention.
Biodynamic champagne is based on the principles of Rudolf Steiner: the vineyard is treated as a complete ecosystem, in harmony with lunar and planetary rhythms. The Demeter and Biodyvin certifications guarantee compliance with these practices. These champagnes often display remarkable aromatic complexity and precision.

Sulphur dioxide (SO₂) is used in winemaking as a preservative and antioxidant. Champagnes labelled sulphite-free are made without added SO₂, only the sulphur naturally produced during fermentation is present. These are more fragile champagnes that require careful storage, but often display remarkable aromatic purity.
Vegan champagnes are clarified without animal-derived products, without casein (milk), albumin (egg) or isinglass (fish). This is an increasingly requested specification from consumers concerned about their diet and environmental impact.

What is the difference between an organic champagne and a natural champagne ?
An organic champagne is certified under organic farming (AB), the grapes are grown without pesticides or chemical fertilisers. A natural champagne goes further in the winery: no dosage, without or with very little added sulphur, using indigenous yeasts. A champagne can be organic without being natural, and vice versa, although both approaches are often complementary among the most committed growers.
Is an organic champagne better than a conventional one ?
Organic certification guarantees environmentally responsible farming practices, not necessarily superior quality in the bottle. That said, growers who commit to this approach generally do so out of deep conviction, and this rigour is often felt in the precision and authenticity of their cuvées. At Avenue des Vins, every organic champagne is selected on tasting criteria, not label alone.
What is the Demeter certification in Champagne ?
Demeter is the international certification for biodynamic viticulture, based on the principles of Rudolf Steiner. It goes beyond organic: the vineyard is worked in harmony with lunar cycles, using specific natural preparations (horn manure, horn silica). In Champagne, a handful of pioneering growers carry this certification, their cuvées are often of exceptional minerality and complexity.
Do sulphite-free champagnes keep less well ?
Generally yes. Sulphur plays a role as a preservative and antioxidant. A champagne made without added sulphites is more sensitive to temperature variations and oxidation. It must be stored between 10 and 15°C, away from light, and consumed more quickly than a classic champagne, ideally within 2 to 3 years.
Does a vegan champagne taste different ?
No. Vegan clarification uses agents of mineral or plant origin (bentonite, activated charcoal) instead of traditional animal-derived agents. The result in the bottle is identical from a tasting perspective. The difference is ethical, not organoleptic.
Can you find organic champagnes under 30 euros ?
Yes. Some grower-producers committed to organic farming offer accessible cuvées, particularly in the Aube, Côte des Bar, where prices are generally more affordable than in the Montagne de Reims or on the Côte des Blancs. How do you identify a genuine organic champagne on the label ?
Look for the AB Agriculture Biologique logo on the label or back label, this is the official French certification, recognised at European level. For biodynamics, look for the Demeter or Biodyvin logos. A simple mention of "crafted with respect for nature" without a certified logo guarantees nothing, beware of greenwashing.
