A revelation in Argentina: the starting point of a wine destiny

In 1990, during a tasting in a Mendoza bodega, Hervé Joyaux Fabre, a Bordeaux wine merchant, discovered a single-varietal Malbec. The power, depth, and aromatic precision of this wine struck him immediately.

At a time when Malbec was still a supporting actor, Hervé understood it could become a star. He decided to invest in Argentina and reveal this grape at the highest level.

Fabre Montmayou: the first Franco-Argentine Malbec success story

In 1992, Hervé founded the Fabre Montmayou winery with his childhood friend, Pierre Noyer Montmayou. His vision was bold: produce a premium Malbec aimed at the North American market. The success was immediate.

In 1997, Diane, Hervé’s wife, joined the adventure and contributed to the international expansion of the brand. Today, Fabre Montmayou spans 450 hectares from Mendoza to Patagonia and stands among the top references for Argentine Malbec.

The return to French origins: Cahors, the ancestral home of Malbec

After years in South America, Hervé and Diane wanted to reconnect with their roots and returned to the historical birthplace of Malbec: Cahors. They were instantly drawn to the region’s:

  • diversity of terroirs,
  • gastronomic energy,
  • modernizing vineyards,
  • warm and welcoming community.

They saw a land of immense potential.

Vignobles Saint Didier Parnac: a decisive acquisition in 2017

In 2017, Hervé and Diane became owners of Vignobles Saint Didier Parnac, an emblematic estate grouping three outstanding Cahors properties:

Each estate has a strong identity and a strategic location, allowing the family to express the full range of Malbec’s nuances.

Two major terroirs to elevate Malbec: the Causse and the Lot Valley

Cahors is built on Jurassic-era soils, between 250 and 350 meters in altitude. Prieuré de Cénac, the highest point of the Vignobles Saint Didier Parnac estate, sits near 300 meters on a unique limestone plateau.

The Causse: Limestone, arid, mineral — producing refined, tense, beautifully structured Malbecs.

The Lot Valley: Rich, deep alluvial soils shaped by the river over 15 million years — giving generous, bold, fruit-forward wines.

This geological diversity allows the estate to craft a complete, precise, and elegant range that embodies the spirit of modern Cahors.

Prieuré de Cénac: a powerful terroir, a spiritual place

Hervé often recalls the first moment he set foot on Prieuré de Cénac: a shock of emotion, a moment of awe, an inner certainty.

Perched on a limestone promontory overlooking the valley, the site radiates a quiet, almost mystical energy. Hervé saw in it the potential for a great wine capable of rivaling the finest crus of the Southwest.

His ambition: make Prieuré de Cénac a global benchmark for Cahors Malbec.
