Domaine Roc de l’Abbaye – The Purity of Sancerre on Flint Terroir
An estate in the heart of Saint-Satur
Domaine Roc de l’Abbaye is located in Saint-Satur, the historical cradle of the Sancerre vineyard, at the foot of the famous Sancerre hill and along the Loire River. This village, shaped by its former abbey and its flinty slopes, has been a privileged place for vines for centuries.
Today, the Mollet family continues this tradition with a legendary parcel: the Clos du Roc, one of the most emblematic sites of the Sancerre region.
A Family History Between Abbey, Loire and Vines
From monks to the creation of the Clos du Roc
As early as the 11th century, the abbey of Saint-Satur shaped the local winegrowing landscape. The canons developed vine cultivation there and were already farming the Clos du Roc — a south-facing slope on flint soils, considered one of the historical birthplaces of Sancerre wines.
Over the centuries, wars, rebuilding and renewal followed, but vines remained at the heart of Saint-Satur. In 1450, the abbey recreated the Clos du Roc estate: four hectares of flint soil facing the sun, already known for the quality of their wines.
The Mollet lineage, between Pouilly-Fumé and Sancerre
A few kilometers away, in Tracy-sur-Loire, the Mollet family has cultivated vines since the 18th century. Generation after generation, the Mollets contributed to the development of the Pouilly-Fumé vineyard:
• André Mollet was already harvesting “blanc fumé” and chasselas in the early 18th century.
• Alexandre Mollet replanted the family vineyard after the phylloxera crisis.
• Paul Mollet co-founded and managed the cooperative winery of Pouilly-sur-Loire after World War II.
In 1973, Jean-Paul Mollet married Rose-Marie Maudry, granddaughter of Pierre Maudry, who had replanted the Clos du Roc in 1954. The two heritages then united under one estate.
Florian Mollet, a New Generation of Winemaker
In 2000, their son Florian Mollet returned home to take over and expand the estate. Trained in France and abroad (Australia, South Africa…), he applied his experience to the flint terroir. He built a modern winery in Saint-Satur, gradually expanded the vineyard to 17 hectares and established a recognizable style:
• straight, precise wines,
• finely chiseled minerality,
• generous aromatics carried by freshness.

A 100% Flint Estate: A Unique Case in Sancerre
The flint terroir, the signature of the domaine
Domaine Roc de l’Abbaye is one of the rare estates whose entire Sancerre vineyard lies on flint soils. This terroir represents only about 15% of the Sancerre appellation, yet it is one of the most sought-after.
Flint gives wines:

A terroir shaped by geology
The estate is located close to the Sancerre fault, a major tectonic feature that shaped the Loire Valley and aligned the hills of Sancerre, Saint-Satur and Orme aux Loups.
The flinty clay hillsides, the siliceous conglomerates and the various types of flint (white, grey, black) give each parcel a strong identity that can be tasted in every cuvée.
The Vineyard – Between Sancerre and Pouilly-Fumé
A precise and diverse patchwork
The estate includes:
• 11.5 ha in the Sancerre appellation, spread over 12 parcels in 5 communes: Bannay, Ménétréol, Saint-Satur, Sancerre and Thauvenay.
• 6 ha in the Pouilly-Fumé appellation, around the winegrowing hamlet of Boisgibault (Tracy-sur-Loire), birthplace of the Mollet family.
The estate’s grape varieties:
• Sauvignon Blanc: the main varietal, planted across all Sancerre and Pouilly-Fumé parcels.
• Pinot Noir: 1.5 ha in Sancerre for red and rosé wines.
Carefully identified parcels
The estate works with vineyards of strong identity: Clos du Roc, Roc de l’Abbaye, Les Beltins, Les Varennes, Les Royeux, Le Thou, Les Cris, Les Travers des Plantes, etc. Each parcel is vinified separately to preserve its character.
Vine Surgery – Preserving Vines Rather Than Pulling Them Up
Domaine Roc de l’Abbaye practices vine “curetage”, a curative technique to combat wood diseases. The principle: remove the infected part of the trunk to prolong its life.
Result:
• about 6,000 vines saved each year,
• an average vine age of 35 years,
• healthier vines producing concentrated, expressive grapes.
A Modern Winery and Historic Cellars
Parcel-based vinification in stainless steel
Built in 2000 in the heart of Saint-Satur, the modern winery allows separate vinification of each parcel thanks to numerous small stainless steel tanks. This precision approach highlights:

Aging in vaulted 17th-century cellars
The top cuvées, particularly the ANTIQUE range and the single-parcel Roc de l’Abbaye cuvée, are aged in 228-liter Burgundy barrels in vaulted underground cellars dating from the 17th century. This brings:
