The whole bunches are then put into vats in a CO2-saturated environment. The Carignan grapes are vinified by carbonic maceration for two weeks under controlled temperatures. The Grenache Noir and the Syrah are destemmed on arrival at the winery. The macerations are carried out for more than three weeks. The wine is then aged in oak barrels for 12 months.
