This recipe highlights lamb gently simmered in the famous earthenware dish with its conical lid, for a slow, covered cooking method that concentrates aromas. It is a perfect recipe for creating beautiful food-and-wine pairings, especially with a Mediterranean red wine or a generous white wine.
Ingredients (serves 4)
- 1.2 kg lamb (shoulder or neck, cut into pieces)
- 3 tablespoons olive oil
- 2 onions, thinly sliced
- 2 garlic cloves
- 150 g pitted prunes
- 60 g blanched almonds
- 80 g black olives
- 2 teaspoons ras el hanout
- 1 teaspoon ground cumin
- 1 teaspoon sweet paprika
- 1 cinnamon stick (optional)
- 30 cl vegetable or chicken stock
- A small bunch of aromatic herbs (parsley, coriander)
- Salt, pepper
Method
- Heat the olive oil in your tagine or a terracotta casserole dish. Brown the pieces of lamb over medium heat until lightly colored. Season with salt and pepper and set aside.
- In the same fat, sweat the onions and garlic. Add the ras el hanout, cumin, and paprika, stirring to coat the spices and bring out their flavor.
- Return the lamb to the dish, add the stock, prunes, almonds, and black olives. Cover with the conical lid to benefit from true slow, covered cooking. Simmer gently for 1 hour 30 minutes to 2 hours, until the meat is tender.
- At the end of cooking, adjust the seasoning, sprinkle with freshly chopped aromatic herbs, and serve piping hot with semolina.
