What to Drink with Braised Lamb Chops?
Here are two delicious pairings for the price of one!
1) The Classic Pairing: A Red Wine with Elegant Structure
Slow-cooked for hours with Provençal herbs like thyme, braised lamb chops develop a tender and aromatic flesh. To enhance its flavor and create the best pairing, choose a wine that is smooth, round on the palate, and has silky tannins. We suggest opting for a red wine whose tannins will complement the fine and delicate texture of the meat. However, keep in mind that braised lamb chops are delicate, so the tannins must be subtle enough to blend harmoniously. Avoid wines with a woody taste and favor those with an elegant structure, ideally aged two or three years. As long as these criteria are met, you can enjoy choosing the appellation: Cahors, Marcillac, Pommard, Saint-Émilion, Touraine...
2) The Original Pairing: A Dry and Robust Rosé Wine
If you’re not a fan of red wine, or if you prefer a more summery pairing, know that rosé wine can also pair beautifully with braised lamb. The key is to choose a rosé that is robust (even spicy) enough to stand up to the strong flavor of the meat. White is not the natural choice here. The tender, rich texture of braised lamb calls for a red with fine tannins or a dry rosé, both sturdy enough to stand up to the meat without overpowering it. Even a full-bodied white lacks the structure this dish needs.
What temperature should the wine be served at with braised lamb chops?
A soft-tannin red is best around 16 to 17°C; any warmer and the alcohol starts to dominate the fruit. A robust rosé should be served cooler, between 10 and 12°C, to keep its freshness against the herbs used in the braise.
Which grape varieties work best with braised lamb?
Malbec (Cahors) and blends built on Merlot and Cabernet Franc (Saint-Émilion) give the round tannins that suit a slow-cooked meat like this. For rosé, look for blends based on Grenache and Syrah, which bring the robust character this pairing needs.
How long can a red wine chosen for this dish be kept?
A red aged two or three years can still improve for several more years under good storage conditions: darkness, a stable temperature around 12 to 14°C, and the bottle lying on its side away from vibrations.
