Produced from a late harvest in early November followed by drying in crates for 3 weeks in our cellars. The grape variety is Melon de Bourgogne (famously used to make Muscadet). Amber yellow colour with a complex and expressive nose with notes of honey and quince. The palate is rich, with an aromatic complexity, drawing on notes of dried and candied fruit such as the fig. Its orangey colour is reminder of the colour of the grapes at harvest time. Its sugar/alcohol balance makes it perfect for serving with foie gras or as an aperitif.
