The terroir Located on the right bank of the Tarn, on sandy-clay soils with very particular gravelly soil conditions. Grape variety 99% Braucol (or Fer Servadou) 1% Duras. Vinification: After cutting back in winter, thinning down the shoots and removing excess future fruit canes, a stripping and manual thinning of the unwanted grapes then follows. The harvest is gathered in the earliest hours of the morning and by hand, and each cluster is selected and transported carefully in crates. After destemming and pressing, traditional pressing us undertaken under strictly controlled temperatures and a significant pumping-over frequency. Maceration takes 12 to 14 days.Ageing takes 24 months in 400l oak barrels (medium heat plus) then a part remains for 5 months in terracotta amphorae (a blend of 3 types of pottery) which gradually reveals multiple aromatic elements, an adds to the palate a touch of body and incompatible minerality.
