Presentation : The Château de La Rivière vineyard spans 65 hectares of vines planted on a clay-limestone terroir. The Château de La Rivière is home to 8 hectares of limestone quarries, perfect for ageing in barrels and for the storage of the bottles. Blend : 67% Sauvignon Blanc and 33% Sauvignon Gris Harvesting : Manual, on 1 and 2 September 2015 Production : 5,000 bottles + 500 magnums Vinification : Direct cold pressing of whole grapes (3°C). Cold settling then alcoholic fermentation at 18°C (of 10% are vinified in new barrels) Ageing : 90% in vats on fine lees, for 5 months. 10% in new barrels with stirring for 2 months. Yield : 65 hl / ha Tasting notes : This wine develops a very expressive nose of grapefruit, citrus and tropical fruit, but also florals. The palate is characterised by a tinghtness and a minerality unique to the great Sauvignon wines. The aromatic strength and the quality of the ageing add finesses and elegance.
