- For a thyme-infused 7-hour lamb shoulder, opt for a full-bodied and spicy red wine based on Syrah and Mourvèdre, such as those from the Rhône Valley, Languedoc, and Provence. A cuvée from an AOC Châteauneuf-du-Pape red, with its notes of ripe fruit and sweet spices, is an excellent choice to accompany this convivial dish.
