What Wine to Drink with an Omelette?

An omelet is one of the simplest dishes to prepare. Just crack eggs into a bowl, add your chosen ingredients, mix with a fork, and you’re done! As you might expect, you don’t need to be a master chef to make this French classic. In France, common ingredients include ham, cheese, mushrooms, onions, wild asparagus, and truffles. With such a variety of recipes, it's essential to carefully consider your recipe before selecting a wine.

Eggs can be a challenge for sommeliers. Their intense and persistent flavor makes them particularly delicate to pair with wine. But don’t worry, we’re here to help! The key to a successful pairing is to choose a refreshing wine with enough character to complement the flavors of the omelet. For many recipes, a white wine, especially a sparkling white like Crémant or Champagne, is preferred. However, some signature recipes, such as truffle or mushroom omelets, might pair better with a fragrant red wine with soft tannins, such as those from Burgundy, the Loire, Jura, or Alsace.

The Guide to the Best Wine Pairings with Omelets

For a traditional ham and cheese omelet, go for sparkling wine with a fresh and refreshing Crémant from AOC Crémant de Bourgogne or a sparkling wine from Jura or Bugey. What could be better for this simple and economical recipe than an affordable, refreshing sparkling white that cuts through the "rich" texture of the omelet? Champagne is also a great alternative.
For scrambled eggs with asparagus or herbs, choose a dry and fruity white wine from AOC Bordeaux or AOC Blaye Côtes de Bordeaux. The Bordeaux region offers white wines with citrus, white flower aromas, and invigorating freshness that are ideal for this type of dish.
Finally, if you're enjoying a delicious scrambled eggs with truffles or a mushroom omelet (such as with cep mushrooms), opt for a fine and complex red wine from Burgundy. This type of elegant red wine with notes of cherry, sweet spices, and underbrush pairs wonderfully with the aromatic profile of truffles or mushrooms without overwhelming the egg texture with excessive tannins.

FAQ - Wine and omelette

Can you drink red wine with an omelette?

Yes, but keep it for fuller versions like mushroom or truffle omelettes. Pick a light red with soft tannins, such as pinot noir, so it doesn't toughen the egg texture. On a plain omelette, red tends to take over.

Which wine goes with a cheese omelette?

A fresh sparkling wine works wonders against the richness of cheese. A crémant or Champagne brings the lift that cleans the palate between bites. A taut, dry white such as unoaked chardonnay also does the job.

What temperature should the wine be with an omelette?

Serve a crémant or Champagne around 7 to 9 °C, and a dry white between 9 and 11 °C. For a light accompanying red, aim for 14 to 15 °C. Too cold, the aromas vanish; too warm, the wine feels heavy.

Which wine pairs with a herb omelette?

Go for a dry, aromatic white that echoes the parsley, chives or tarragon. A sauvignon or a Loire white, with citrus and floral notes, keeps everything crisp without flattening the freshness of the herbs.

Why are eggs tricky to pair with wine?

The yolk coats the palate and its sulphurous note lingers, which dulls many wines. The trick is to seek freshness and clean acidity that cut through that coating feel, rather than a rich wine that would drown in it.
