Veal blanquette is the great classic of French cuisine. But what wine should you choose to go with it?

Tender pieces of veal, spring onions, button mushrooms, carrots and a famous creamy sauce, whose whiteness gives the dish its name is the envy of those who have never had it before. We tend to choose red wines to go with it. However, it is important to note that milk proteins do not go together well with the tannic structure of red wine. Our tip? Choose a round and powerful white with a beautiful acidity to enhance the creaminess of your blanquette, such as a Chablis or Pinot Gris from Alsace.

Our tip: Parboil the blanquette in boiling water with a touch of vinegar.
