There is something about August that naturally draws us towards gastronomy. The holidays are drawing to a close, meals stretch longer, and the wines we choose gain in depth. August is the month for a well-chilled Chablis alongside a seafood platter, for uncorking a Maranges 1er Cru with a grilled côte de bœuf, and for Provence rosés continuing to shine with their natural elegance alongside charcuterie and aged cheeses.
For this month's selection, our team played the card of great terroir diversity: the clay-limestone soils of Burgundy that lend Chardonnay its characteristic minerality, the chalky Champagne soils that underpin the structure of its finest cuvées, and the schist and limestone of Provence that shape rosés with a taut palate and saline finish.
