Loire, Bordeaux or Languedoc: How Sauvignon Blanc Changes

In the Central Loire, a cool climate and limestone or flint soils give Sauvignon Blanc a crisp, taut style. In Sancerre and Coteaux du Giennois, white wine is made from Sauvignon Blanc alone. Growers there work three soils: white marl (terres blanches), stony limestone (caillottes) and flint-rich clay (silex). According to INAO, France’s appellation authority, the same grape gives more powerful wines on marl, fruitier ones on limestone and more floral ones on flint.

In Bordeaux, Sauvignon Blanc is usually blended with Sémillon, which adds body, and sometimes with Muscadelle. When it’s bottled on its own, as in some white Blaye Côtes de Bordeaux or Côtes de Bourg, it generally ripens further than in the Central Loire, and its aromas often shift from citrus toward yellow fruit.
