Chenin harvested when it has entirely reached noble rot, selectively picked on our 40 to 50-year old plots, fermentation and ageing for 12 to 15 months in oak barrels.This sweet wine is characterised by complex aromas of stewed fruits and honeyed notes. On the palate it's an explosion of flavours carried by structured freshness and superb persistence. It can be enjoyed as an aperitif, or as an accompaniment to foie gras, blue cheeses or even as a meditation wine on its own at the end of a meal.
