Les Caves du Commandeur: more than a century of Provençal wines, between nature and precision

Located in Montfort-sur-Argens, in the heart of Provence Verte, Les Caves du Commandeur embody an authentic, luminous and demanding vision of Provençal wine. Founded in 1913, this historic cooperative has brought together generations of winegrowers around a shared ambition: to let the terroir speak without ever exhausting it.

Here, between the Mediterranean Sea and the Verdon gorges, vineyards benefit from a rare balance—generous sunshine, cool nights and a steady mistral wind. Ideal conditions for producing elegant, fresh and unmistakably Provençal wines.

A large-scale collective vineyard, deeply rooted in its territory

The vineyard of Les Caves du Commandeur now covers around 500 hectares, spread across nine emblematic villages of the Var: Montfort-sur-Argens, Correns, Cotignac, Carcès, Salernes, Le Val, Le Thoronet, Villecroze and Entrecasteaux.

This mosaic of terroirs allows the production of wines under three main designations:

AOP Côtes de Provence

AOP Coteaux Varois en Provence

IGP Var

Predominantly clay-limestone soils, combined with moderate altitude and significant day–night temperature variations, give rise to wines that are expressive, balanced and easy to digest—perfectly aligned with contemporary expectations.

Sustainable viticulture, concrete and measurable

At Les Caves du Commandeur, environmental commitment is not cosmetic. It is expressed through clear, deliberate technical choices:

over 90% of the vineyard certified organic or HVE

no use of CMR-classified products

soils worked, grassed and preserved over the long term

predominant use of Cordon de Royat pruning to control yields

rigorous parcel-by-parcel selection

The goal is both simple and demanding: to produce healthy grapes sustainably, without compromising soil balance or local biodiversity.

Night harvesting and precision winemaking

Harvests generally begin in late August and extend over nearly six weeks. They are carried out at night, at cooler temperatures, in order to preserve:

aromatic freshness

purity of the juices

the natural balance of the wines

Each grape variety and each parcel is harvested separately, only when optimal ripeness is reached. The cooperative works closely with its growers, combining a collective vision with meticulous execution.

Elegant, consistent and award-winning wines

Luminous rosés, fresh and aromatic whites, generous yet structured reds: the wines of Les Caves du Commandeur stand out for their finesse, balance and consistency.

They are regularly awarded in national competitions and praised for their excellent balance between pleasure and authenticity.

These are wines designed for everyday enjoyment as well as for large gatherings—always faithful to the spirit of Provence.

A human cooperative, focused on the future

Today, nearly 60 winegrowers unite their expertise within Les Caves du Commandeur. Together, they carry a shared vision:
