A couple of winegrowers unlike any other. From pharmacy to the vine, there is sometimes only one step and a lot of curiosity. A former pharmacist, Pascal swapped medicines for grapes: trained in Montpellier, where oenologists are also trained, it was there that the wine bug caught him. Alongside him, Mary, his Irish wife, shares the same taste for science and wine: she now teaches oenological chemistry at the University of Montpellier. In 2001, the couple fell for a property in Neffies, in the Herault, and founded Domaine Pech Rome.
A hillside estate, between science and terroir
The name Pech Rome comes from the Occitan pech, meaning hill: a tribute to the local relief and to an ancient Roman villa that once stood on the site. The estate spans 12 hectares, at 150 metres of altitude, on the hillsides of Neffies, overlooking the Herault valley and skirting the border of the Faugeres appellation. This unique location, bathed in sun and caressed by the wind, offers a rare geological diversity: Villafranchian pebbles for Syrah, fine and mineral; volcanic basalt for Mourvedre, dense and enveloping; clay-limestone for Grenache, round and fruity; pure limestone for Carignan, structured and refined. At Domaine Pech Rome, the philosophy is simple: to make authentic, elegant, accessible wines. Pascal and Mary seek the purity of the fruit, the freshness of the terroir and fine drinkability, whether the wine is enjoyed young or after a few years of ageing. The vinifications are done in respect of the grape, without excessive extraction, to preserve the finesse of the aromas and the elegance of the texture. The result: wines of immediate pleasure, which tell both the land of the Languedoc and the hand of the winegrower.

Some of the estate's cuvees have been awarded by the Guide Hachette des Vins, a symbol of recognised, consistent quality.
