Domaine Le Loup Bleu, Sainte-Victoire: Croix du Sud, the organic rosé of Provence's first Cru
A few months after taking over Domaine Le Loup Bleu, Sylvie and Marc Dubois watched their 10 hectares disappear under snow, a rare event in Provence that showed them their new estate in a completely unexpected light. Set at the foot of the Sainte-Victoire mountain, on clay-limestone soils at 400 metres of altitude, the estate makes organic wines within the Côtes de Provence Cru Sainte-Victoire appellation, the very first Côtes de Provence appellation to be granted Cru status. Available direct from the producer on Avenue des Vins.

How would you describe your estate?
10 hectares of clay-limestone at 400 metres, at the foot of Sainte-Victoire
Domaine Le Loup Bleu covers 10 hectares in a deeply preserved setting, at the foot of the Sainte-Victoire mountain, the limestone massif that dominates the landscape between Aix-en-Provence and the Var. The vineyard sits on clay-limestone soils at 400 metres of altitude, a detail that changes everything: this elevation gives the estate's wines a freshness and minerality that are directly characteristic of the appellation.
This setting allows us to produce wines with a great deal of freshness and minerality, characteristic of the Côtes de Provence Cru Sainte-Victoire appellation.
The estate takes its name from the mountain's old Latin name, Podium Luperium, "the hill of wolves", and from Marc Dubois's passion for aviation, which still inspires the names of several of the estate's wines today.
When did wine get into your blood?
A family story, taken up at retirement age
Wine first got into the family's blood through Sylvie Dubois's grandmother, who owned vines in the Vaucluse. When she passed away, the question of taking over her estate came up, but the timing did not fit with Sylvie and Marc's careers, then in medicine and aeronautics respectively. It was only as retirement approached that the desire for a new adventure resurfaced, and wine emerged as the obvious answer.
Reaching retirement age, we wanted to set off on a new adventure, and wine then appeared as the obvious choice.
The estate was taken over at the end of 2011, after careers built around entirely different fields. A joint career change that turned a family memory from the Vaucluse into a concrete project at the foot of Sainte-Victoire.
What philosophy guides your work in the vineyard and the cellar?
Organic since day one, with some biodynamic influences
For Sylvie and Marc Dubois, respecting nature and biodiversity was never up for debate, it was a given from the moment they took over the estate. Organic farming was the obvious choice from the very start of the project, with some influences drawn from biodynamics. The estate has been certified organic since 2015.
When we set up the estate, it was obvious to us that we would farm organically, with some influences from biodynamics.
Which wine best represents your estate?
Croix du Sud, the rosé that carries Provence's first Cru
The wine that best represents the estate is a rosé, and the Croix du Sud cuvée in particular, made under the Côtes de Provence Cru Sainte-Victoire appellation. In 2025, this appellation reached an unprecedented status in Provence: it became the first Côtes de Provence denomination to be officially granted Cru status by France's INAO, the national appellation authority, after decades of collective effort by local winemakers. A classification that recognises a terroir already singled out for its distinctiveness back in 2005.
The rosé, and especially our Croix du Sud cuvée, under the Côtes de Provence Cru Sainte-Victoire appellation, the first Côtes de Provence denomination to be granted Cru status.
Sylvie and Marc happily enjoy it in summer, as an aperitif, or alongside grilled fish, a simple pairing that mirrors the freshness and minerality of this mountain rosé.
