How about a yellow wine/pata negra combination?
A Unique Pairing: Pata Negra and Vin Jaune
This original pairing comes from an idea proposed by the magazine Septième Goût and Maison Roble.
A Fortified Wine for a Refined Delicacy
Originating from Spain, pata negra is a fine, fatty, and aromatic ham whose complex flavor results from several years of aging (which varies depending on the type of pata negra and its region). The process of making vin jaune is similar to that of pata negra. Initially produced as a dry white wine, it is then placed in a 228-liter barrel for six years and three months. During this time, a fine veil of yeast forms on the liquid to prevent oxidation from exposure to air. Both pata negra and vin jaune, stemming from lengthy production processes, are thus made for each other! That’s the theory; now, let’s move to the practice: the tasting.

FAQ - Vin jaune and pata negra
What wine goes with pata negra?
Pata negra is fatty and lingers on the palate, so it needs a wine with character. Vin jaune from the Jura stands up to its long ageing, and a full-bodied Arbois Chardonnay with apple and vanilla notes works just as well.
Why does vin jaune pair with Iberian ham?
Both come from long maturation: over six years under a veil of yeast for vin jaune, several years of curing for pata negra. This shared slow ageing builds harmony rather than contrast on the palate.
At what temperature should vin jaune be served?
Serve vin jaune at around 14 to 16 °C, warmer than a standard dry white. This range opens up its walnut and spice aromas without masking the richness of the ham.
Is vin jaune a dry white wine?
Vin jaune starts as a dry Savagnin white, then ages under a veil of yeast for six years and three months in barrel. The result is an oxidative wine with a style all its own, distinct from an ordinary dry white.
Can I replace vin jaune with another Jura wine?
Yes. An Arbois Chardonnay, such as the one from Domaine Jacques Tissot, brings a full palate with apple and apricot aromas that suit fine charcuterie and pata negra alike.
