Domaine Roc de l'Abbaye
Located at the foot of the Clos du Roc, a historic plot of the Sancerre region, Domaine Roc de l’Abbaye is set within a landscape shaped by centuries of winemaking tradition. The village of Saint-Satur, bordering the Loire and leaning against the Sancerre hill, saw the founding of the Abbey of Saint-Satur in 1034 and the development of the first vines of the Clos du Roc as early as the 15th century. Today, these flint-rich hillsides remain the identity core of the estate, managed by the Mollet family. Heir to a long line of winegrowers, Florian Mollet took over the family legacy in 2000, after experiences in Australia and South Africa. He gradually expanded the vineyard to 17 hectares, divided between Sancerre and Pouilly-Fumé, on a terroir strongly marked by flint.

How did Florian Mollet take over the family estate?
At the heart of the Saint-Satur hillsides
Roc de l’Abbaye represents the quintessence of the Flint terroir,
sums up the spirit of the estate today.
The recent development of the estate is driven by the desire to reconcile heritage and modernity, producing precise and straight wines. The Clos du Roc, the true symbol of the estate, benefits from a unique south-facing terroir, where the monks of Saint-Satur cultivated vines several centuries ago. Florian continues this historic work while bringing a contemporary vision of wine, based on precision, understanding of the terroir, and the search for the purest expression of Sauvignon Blanc. Passionate from a young age, he grew up among the vines and considers wine not as a product, but as a way of life.
What role does terroir play in the wines?
Terroir above all
Florian Mollet approaches each plot as a living ecosystem, whose nuances must be understood in order to reveal its essence. The estate’s vineyard stretches across five villages and is divided into 12 plots. The vines grow mainly on flint soils, which give the wines their unique tension and precision. The goal of Domaine Roc de l’Abbaye is above all to respect the identity of its terroir, its grape variety, and the vintage. This approach makes it possible to produce wines with a chiselled aromatic expression, fully revealing the minerality of the terroir.
An elegant and vibrant wine, with beautiful structure, reflecting the terroir and revealing the purity of Flint,
is how Florian describes the style he aims for.
This sensitivity is accompanied by a deep respect for living ecosystems. The estate cultivates its vines with the goal of preserving biodiversity and soil balance, taking into account today’s environmental challenges. His daily motivation lies in the desire to share the emotion of a great wine. Among his most significant memories, Florian recalls discovering a forgotten cuvée in his cellar, a stroke of luck that gave birth to a unique wine, a testament to the richness of the Roc de l’Abbaye terroir.
How are the cuvées vinified and aged?
A modern cellar serving the wine
Within the cellar, built in 2000, every detail contributes to revealing the character of each plot. The multiple stainless-steel tanks allow separate vinification, respecting the identity of each terroir. The estate’s finest cuvées, such as those from the ANTIQUE range or the single-plot Roc de l’Abbaye cuvée, are then aged in 228-liter barrels in the estate’s magnificent 17th-century vaulted cellars. A place where tradition and modernity meet to refine the wines in a perfectly controlled environment. This meticulous work produces wines in the Sancerre and Pouilly-Fumé appellations with great purity, marked by intense aromatics and a clear minerality, the signature of the Flint terroir.
Capturing the truth of the vintage and continuously improving the estate,
is the ambition guiding each new year.
The wines of Domaine Roc de l’Abbaye stand out for their precision, freshness, and ability to faithfully reflect their origin. Trained in France and abroad, Florian distinguishes himself with a demanding technical approach. However, he always relies on the experience and know-how passed down by his parents, still present during the estate’s key moments. The cuvées of Roc de l’Abbaye have gradually become references for lovers of Sauvignon Blanc and Loire wines, thanks to this unique blend of traditional expertise, modern vision, and deep respect for the terroir.
