How did you become a winemaker in the heart of Saint-Émilion?
From property developer to winemaker: a second life in Saint-Émilion
Some encounters change a life. The one between Château des Rêves and its current owner happened in 2020, and it was never part of any career plan. For thirty years, he ran a property development company. Wine, meanwhile, remained a parallel passion, quietly nurtured, never fully fulfilled.
Then a friend introduced him to this place: an estate in the heart of the Saint-Émilion vineyards, with the bell tower of the iconic church on the horizon. The setting, the landscapes, the scent of the vines everything felt like a revelation.
“The setting, the landscapes, the scents… everything felt like a revelation. That was when I decided to make this dream real: to grow vines with the ambition of producing a great wine.”
He bought the estate. He was over fifty, had no experience as a winemaker, and yet had complete conviction. It is precisely this outsider profile curious, demanding, with no old habits to unlearn that gives Château des Rêves its singular character.
Where does your passion for wine come from?
A sensitivity to taste rooted in childhood
Passion does not always appear all at once. In his case, it was built gradually and naturally, from a sensitivity to taste inherited from childhood.
“Since childhood, I have always had a taste for fine products. My mother used to cook wonderful meals for us, and that is no doubt where my sensitivity to taste began.”
Wine came later, as an extension of that curiosity for things made with care, precision and love of the product. Until the day that passion became too strong to remain a weekend activity, and a choice had to be made.
He chose the vine.
What is the philosophy of Château des Rêves?
4.5 hectares tended like a garden, plot by plot
Four and a half hectares. A modest size, deliberately chosen and fully embraced, allowing each plot to be worked like a garden, with the care and precision that larger estates cannot afford. Gravel, clay, silt: each soil type is identified, monitored and vinified separately before the final blend.
As soon as the estate was taken over, the transition to sustainable viticulture began. Not as a passing trend, but out of deep conviction: respecting the natural balance of the terroir in order to reveal its full potential. The vines are around thirty years old, fully mature, and rooted in a clay-gravel seam with excellent drainage properties.
From this philosophy come two wines, as different as they are complementary. Château des Rêves, a blend of 85% Merlot and 15% Cabernet Sauvignon, aged in French oak barrels and terracotta amphorae, stands out for its intensity, structure, black fruit notes and dense tannins. L’Éveil des Rêves, 100% Merlot, aged in tank and amphora without wood, focuses instead on pure fruit, aromatic brightness and freshness.
Château des Rêves 2022 was awarded 94/100 by James Suckling, one of the world’s most influential wine critics. It was also selected in the 2026 Guide Hachette des Vins and rated 15.5/20 by the Vins & Terroirs guide — a swift and powerful recognition for an estate taken over only in 2020.
What memory has marked you most deeply at the estate?
Humility in the face of the elements, season after season
When asked what memory has marked him most since becoming a winemaker, his answer is striking in its depth. It is not a medal, nor an exceptional vintage. It is a feeling.
“More than a specific memory, it is a feeling that stays with me: the constant connection between working the vine and the rhythms of nature.”
Frost, hail, mildew, extreme heat all reminders of how fragile everything is. And how necessary it is to move forward patiently, to learn to observe, to listen to the vine, to work with that delicate balance. It is this relationship with time, this humility before the elements, that makes the profession so demanding and so deeply human.
A property developer is used to building according to a schedule he controls. The vine, by contrast, does not negotiate. He had not expected that lesson. And it may well be the most valuable one of all.
What are your plans for Château des Rêves?
Evenings of vines, wine and music
Wine is not his only passion. The piano has always been with him, and from this dual sensitivity came the estate’s most original project: wine and music evenings in the heart of the vineyards.
“My ambition is to create a dialogue between these two forms of emotion: wine and music. To offer an experience where one could taste a wine surrounded by vines, carried by a magnificent landscape, while being moved by musical works, whether classical or contemporary.”
The idea is compelling because it fits the man so well. A developer who spent thirty years creating spaces for others, a pianist who knows what music does to the body and the mind, a winemaker who has learned that the best wine is enjoyed in a moment not alone in front of a glass.
