Aligoté

Aligoté: Origins and Characteristics of This Unique Grape Variety

Aligoté is an iconic white grape variety from the Burgundy vineyards, which, although sometimes underestimated, holds a firmly rooted place in the world of wine. Originating from France, specifically Burgundy, Aligoté is known for producing lively and delicate wines, capable of capturing the essence of its terroir with elegance and simplicity. In this article, we delve into the world of Aligoté, exploring its origins, preferred terroirs, unique characteristics, and the best food and wine pairings to enjoy with a white wine made from Aligoté.

Description and Origins of Aligoté

Aligoté finds its roots in Burgundy, a French wine region renowned for its exceptional wines. It is the second most important white grape variety in Burgundy after Chardonnay. Probably introduced around the 17th century, Aligoté is particularly valued for its robustness and ability to withstand cool climatic conditions. Aligoté has gradually secured a place in certain Burgundy terroirs less suited to Chardonnay cultivation. Unlike its more famous cousin, Aligoté tends to produce lighter wines with marked acidity and floral notes often enhanced by a hint of minerality. Traditionally used in the preparation of kir, the best Aligoté wines do not need blackcurrant liqueur to reveal their quality! Despite its understated presence on the international scene, Aligoté is gaining popularity among wine enthusiasts seeking white wines with a lively and relatively neutral profile.

Primary Terroirs Where Aligoté is Cultivated

Firmly embedded in the Burgundy wine landscape, Aligoté reaches its peak in specifically dedicated appellations, such as AOC Bourgogne Aligoté and AOC Bouzeron. This grape variety thrives on limestone soils and sunny slopes, offering a unique expression of freshness and liveliness. Beyond Burgundy, Aligoté also adapts to the soils of the Bugey, Savoie, and Jura regions. Although still relatively unknown, Aligoté has also ventured beyond French borders, establishing itself in vineyards in Switzerland and Eastern Europe, particularly in Moldova and Ukraine. This demonstrates Aligoté’s potential to produce quality wines, contributing to the global recognition of this Burgundian grape variety and expanding its footprint on the international wine map.

Aligoté is a fresh and delicate white grape variety that offers a wide range of food and wine pairing possibilities. Follow our tips to achieve the best food and wine pairings with a bottle of dry white wine made from Aligoté:

• To accompany escargots de Bourgogne or fresh goat cheese, serve a bottle of dry white wine from a domain or château in AOC Bourgogne Aligoté. With its fine notes of white flowers (acacia), citrus, and green apple, AOC Bourgogne Aligoté white wine enhances these delicate dishes without overwhelming them.
• For tête de veau with gribiche sauce or andouillette with mustard sauce, opt for a dry white wine from Burgundy from a domain or château in AOC Bouzeron. This premier Aligoté appellation will elevate your offal recipes with its subtle aromas of flowers and flint, and a sharp acidity that cuts through the richness of these dishes.

Bourgogne Aligoté and Bouzeron, the reference appellations

Aligoté is grown across much of Burgundy, but two appellations are especially bound to it. AOC Bourgogne Aligoté is the grape’s regional appellation: it covers a wide part of the Burgundian vineyard and gives dry, crisp white wines that are best drunk fairly young.

AOC Bouzeron, in the Côte chalonnaise, is the only village appellation in Burgundy dedicated to Aligoté, where the grape is grown on its own rather than blended. To taste Aligoté at its most accomplished, Bouzeron is often where enthusiasts turn.

Serving an Aligoté wine, and the classic Kir

Everything appealing about an Aligoté rests on its freshness, so serve it well chilled, at around 8 to 10 °C. Too cold and its delicate white-flower and citrus aromas close up; a touch too warm and the acidity takes over. Like most dry white wines built on crispness, it shows best as an aperitif or with a starter rather than after long cellaring, and it is generally made to be enjoyed young.

Aligoté is also the traditional base of a Kir, the Burgundian aperitif that tops a glass of dry white wine with a little crème de cassis: the wine’s lively acidity balances the sweetness of the liqueur. For a sparkling version, pour a Crémant de Bourgogne instead of the still wine and you have a Kir Royal, served well chilled.

Frequently asked questions about Aligoté

What is the difference between Aligoté and Chardonnay?

Aligoté and Chardonnay are the two main white grapes of Burgundy, but they are quite different. Chardonnay gives fuller wines, sometimes oak-aged and built to cellar, while Aligoté stays lighter and livelier, with marked acidity and a straight, crisp palate that is best enjoyed young.

Is Aligoté a dry or a sweet wine?

Aligoté produces dry white wines. Its hallmark is a frank acidity and a lively palate with no sweetness, and it also appears in some Crémant de Bourgogne, always on freshness.

Why is Aligoté the grape of the Kir?

Aligoté is the traditional grape of the Kir because its acidity balances the sweetness of the crème de cassis. Its frank, fairly neutral profile lets the blackcurrant come through without being masked, which is why the Kir is classically made with a Burgundy Aligoté.

Is Aligoté a wine for aging?

Aligoté is generally not a wine for aging. It is best enjoyed young, within two to three years, to make the most of its freshness, though the most structured examples, such as some Bouzeron, can wait a little longer in the cellar.
