On a clay-limestone soil, vines aged from 40 to 50 years produce a Saumur Champigny with a deep and velvety colour, with bluish hues, which open onto a nose with smooth scents of red and black fruit. : cherry, blackberry, blueberry and blackcurrant. The full-bodied and fruity palate offers great balance.A supple attack with very well-blended tannins. The mid-palate has substance that is present, but not excessive. Harmonious finish, persistant on the fruit. Appellation : SAUMUR CHAMPIGNY A.O.C. Terroir : Clay-limestone Variety : Cabernet Franc Vines : 50 years on average Vineyard management : The vineyard operates organic agriculture Harvest : Manual, harvest sorted on a table installed over a container and upon arrival in the winery Vinification : Destemmed harvest Vatting with maceration for around 21 to 24 days, at low temperature. Malolactic fermentation in vats Ageing : In vats for 7 to 9 months. Filtration prior to bottling Pairings : Wine with aromas of fruit and a wonderful length on the palate. A wine to accompany a meal, in particular meats, either roasted or in a sauce.
