This is a wine with a mysterious and legendary name, which is sufficient along to establish the fame of Jura. It is the product of attentive care and centuries-old tradition. Only the Savagnin variety makes it possible to obtain this unique wine with such a particular flavour, : dubbed "yellow".During ageing (six years and three months) a film of yeast forms on the surface, protecting it and permitting its transformation into "Yellow Wine". At the end of this period, it loses a third of its volume. They say that it "eats the sediment". It is presented in an historic bottle, : the Clavelin. King of wines and wine of Kings, it makes a superb accompaniment to the most refined of meals.Serve at room temperature and, if possible, open a few hours in advance. Drink as an aperitif with Comté cheese and nuts, with creamy dishes, a foie gras, escargot, crayfish, chicken or croûte aux morilles.
