Tasting : A light purple colour.purple colour with light tints. An expressive nose that entices with red fruit and just a touch of spice. On the palate the attach is supple and round, making for a delicious, fruity and light wine. The finish is fresh and invigorating.To be enjoyed right away at room temperature, but also chilled in the summer, with barbecues or cold cuts. The vines are aged for an average of 35 years, with a density of around 3,5000 stems per hectare. Every other row is grassed over. One side has been stripped. The pruning method used on these parcels is double guyot.Vinification : This wine is from a plot selection comprising Merlot and Cabernet Sauvignon. The grapes are harvested when fully mature, destemmed and put into vats. After a pre-fermentation phase, the fermentation process is triggered, the pump-overs are subdivided and examined day-to-day, depending on the progress of the fermentation. The temperatures are regulated. After running off, the marc passes into the wine press and the wine undergoes malolactic fermentation in a vat.
