How to serve and keep Souvignier Gris

Souvignier Gris is an aromatic white and rosé that shows best well chilled, between 8 and 10 °C. It makes an easy aperitif and partners light starters, seafood and summer plates with ease. Most bottles are best enjoyed young, while their freshness and aromatics are at their peak. Souvignier Gris and disease-resistant grape varieties

Souvignier Gris belongs to a recent generation of disease-resistant grapes, often grouped under the name PIWI, from the German pilzwiderstandsfähig, meaning fungus-resistant. Because the vine stands up to fungal diseases such as powdery and downy mildew largely on its own, growers can treat the vineyard far less often, which makes Souvignier Gris a natural fit for organic and biodynamic estates. Its grey-tinged skin also allows for skin-contact and lightly orange styles alongside the classic white and rosé. Still grown in small quantities, it is found mainly in Germany and, increasingly, in the south of France.
