Mas de Carrat: Organic AOP Languedoc Saint-Drézéry wines & exceptional olive oil
Between the Cévennes and the Mediterranean, on a sun-drenched promontory swept by the tramontane wind, Mas de Carrat crafts its AOP Languedoc Saint-Drézéry wines and organic olive oil with conviction and precision.
Here, the sun is intense, nights are tempered by sea breezes, and the stone tells an ancient story. The result? Deep, structured and elegant wines that carry the distinctive signature of the Saint-Drézéry terroir.
A confidential estate in the heart of the Languedoc
The vineyard covers 9 hectares in a single block, at 150 meters above sea level. Planted on hillside slopes, the vines sink their roots into deep, stony and living soils.
The emblematic southern grape varieties find their full expression here:
Syrah
Grenache Noir
Carignan
Grenache Blanc
Roussanne
The average vine age exceeds 30 years, with some parcels over 50 years old. This natural maturity brings concentration, complexity and depth to the wines.
Since 2010, a Mediterranean olive grove has complemented the landscape. Vines and olive trees coexist in harmony, within a preserved ecosystem where biodiversity is a daily reality.
A distinctive terroir: rolled pebbles, marl and limestone veins
Mas de Carrat benefits from exceptional geology.
To the north, limestone scree soils bring tension and finesse.
To the south and west, impressive flows of rolled pebbles rest on deep clay marls. These pebbles store heat during the day and release it at night, encouraging slow and balanced ripening.
This diversity of soils, typical of AOP Languedoc Saint-Drézéry, gives birth to wines that are structured yet always elegant, powerful without heaviness, complex without excess.
Demanding and committed organic viticulture
Certified organic since 2022, Mas de Carrat goes beyond the minimum requirements of organic farming standards.
Each parcel is worked with precision and respect. Interventions are limited to what is strictly necessary. Manual work remains central: pruning, debudding, harvesting—nothing is left to chance.
The objective is clear: preserve soil life, encourage biodiversity and allow the vine to express its natural identity.
A great wine always begins with healthy grapes. Here, that principle guides every decision.
Parcel-by-parcel winemaking and tailored aging
In the cellar, the philosophy is simple: reveal without betraying.
Each parcel is vinified separately, with minimal inputs, sometimes none at all. Aging takes place in French oak barrels, most of which have been used for several vintages in order to respect the purity of the fruit.
Bottling is carried out without filtration to preserve texture and aromatic complexity.
The wine is not disguised. It is guided.
A story of boldness and passion
In the 1960s, Louis Spitaleri discovered this stony hillside overlooking the sea. At the time, it was little more than a pile of rocks. With patience and determination, he transformed this rugged land into a promising vineyard.
In the early 2000s, the Mialanes family fell in love with the estate. They modernized vineyard practices, restructured certain parcels, planted new vines and developed the olive grove.
In 2022, organic certification crowned this long-term commitment.
Mas de Carrat was not born from a marketing project. It was born from a deep attachment to the land.
