Domaine Mas Conscience: heritage, terroir and renewal at the heart of the Terrasses du Larzac

Located between Montpeyroux and Saint-Jean-de-Fos, Domaine Mas Conscience draws its identity from an ancient, almost symbolic history. According to local legend, monks once asked villagers to give according to their “good conscience”. The wine and oil offered were transported in jars known as… conscience. A name rich in meaning, and still strikingly relevant today.

Certified organic since 2012, the estate entered a new chapter in 2020 when it was taken over by Roman Kocholl and Audrey Bonnet-Koenig, alongside winemaker Claude Gros. Together, they set Domaine Mas Conscience on a demanding path: revealing the full potential of the site while remaining faithful to its soul.

An elevated terroir with a strong identity: the Terrasses du Larzac

Located in the north of the Hérault, the vineyard lies fully within the Terrasses du Larzac appellation, a terroir renowned for the freshness and complexity of its wines.

Sheltered by the limestone cliffs of the Causse du Larzac, the estate benefits from a Mediterranean climate moderated by altitude: hot, dry summers, cool nights and mild winters. The soils are highly diverse—clay, limestone, rounded pebbles and schist—bringing depth, balance and tension to the wines.

These natural conditions give rise to expressive, elegant cuvées with genuine ageing potential.

Organic farming and precise winemaking

Since the takeover, vineyard and cellar work has followed a clear objective: letting the terroir speak. Organic farming underpins all practices, with constant attention paid to soil life, natural vine balance and accurate ripeness.

In the cellar, oenological choices are precise but never demonstrative. Innovation is used as a tool, serving grape expression rather than becoming an end in itself. Each cuvée seeks sincerity, drinkability and coherence.
