Set between Montpeyroux and Saint-Jean-de-Fos, Domaine Mas Conscience draws its identity from an ancient, almost symbolic history. According to local legend, the monks once asked the inhabitants to give according to their good conscience; the wine and oil thus offered were carried in jars called conscience. A name full of meaning, still strikingly relevant. Certified organic since 2012, the estate found a new breath in 2020 with its takeover by Roman Kocholl and Audrey Bonnet-Koenig, accompanied by oenologist Claude Gros.
A high-altitude terroir with a strong character: the Terrasses du Larzac
Located in the north of the Herault, the vineyard is fully part of the Terrasses du Larzac area, a terroir renowned for the freshness and complexity of its wines. Protected by the limestone cliffs of the Causse du Larzac, the estate enjoys a Mediterranean climate tempered by altitude: hot, dry summers, cool nights, mild winters. The soils, of great diversity - clays, limestones, rolled pebbles, schists - bring depth, balance and tension to the wines. These natural conditions give rise to expressive, elegant cuvees with real ageing potential.
Organic farming and precision winemaking
Since the takeover, the work in the vineyard and the cellar pursues a clear aim: to let the terroir speak. Organic farming structures all the practices, with constant attention to the life of the soils, the natural balance of the vine and the accuracy of ripeness. In the cellar, the oenological choices are precise but never demonstrative: innovation serves the expression of the grapes, not the other way round. Each cuvee seeks sincerity, drinkability and coherence.

Organic farming, in place since 2012, structures all the practices: life of the soils, balance of the vine, accuracy of ripeness. In the cellar, the choices are precise but never demonstrative, innovation remaining a tool at the service of the expression of the grapes. The result: sincere, digestible and coherent wines, carrying the estate's common signature - freshness, balance and identity - from the IGP Saint-Guilhem-le-Desert to the great reds of the Terrasses du Larzac.

The wines reflect the diversity of the plots and intentions. In AOC Terrasses du Larzac, L'Eveil (a wine of character, precise and vibrant) and La Conscience (the flagship cuvee, synthesis of the estate) offer depth and ageing potential. In AOC Languedoc, La Petite Prise (fresh and spontaneous) and L'In (energetic and taut) play on the freshness of the Larzac. In IGP Saint-Guilhem-le-Desert, Serenite (luminous), Tapade (gourmet), Cieux (finesse and depth) and Funkey Donkey (free and bold) are cuvees for pleasure. All are certified organic.
