Born into a family deeply rooted in the Bordeaux vineyard, Olivier Fleury embodies a demanding and sincere vision of wine. Through Vignobles Olivier Fleury, he crafts characterful wines across 32 hectares of vineyards, spread over some of Bordeaux’s most prestigious appellations, producing sweet wines, dry wines and even sparkling wines.

His work is expressed through emblematic estates such as Château du Pavillon, Château Les Roques, Clos des Servitudes and Château Fleury.

The vineyards of Olivier Fleury extend across a wide range of renowned Bordeaux appellations: Sainte-Croix-du-Mont, Loupiac, Barsac and Sauternes, as well as Cadillac Côtes-de-Bordeaux, Bordeaux Supérieur, Bordeaux dry white, Bordeaux rosé and even Crémant de Bordeaux.

Château du Pavillon – An emblematic terroir of Sainte-Croix-du-Mont

Dating back to the 18th century, Château du Pavillon overlooks the hillsides of Sainte-Croix-du-Mont and offers spectacular views over the Garonne River. The vineyard is planted on gravel and clay-limestone soils enriched with fossilised oysters, a unique geological signature of the area.

Its south-facing exposure, combined with steep slopes, encourages aromatic concentration and the development of noble botrytis, essential for crafting great sweet wines. Sémillon, Sauvignon Blanc and Muscadelle express here their finesse, richness and remarkable ageing potential.
