La Dame de Onze Heures

A 1.22 ha micro-property in the heart of Saint-Émilion, the smallest of the appellation. Certified organic and run in permaculture, Merlot and Cabernet Franc, 3 cuvees revealed by the ageing.

On a clay-limestone terroir in the heart of Saint-Emilion, La Dame de Onze Heures is a wine micro-property of only 1.22 hectare, the smallest of the appellation. Run according to the principles of permaculture and certified organic, this unique plot embodies an artisan, committed vision of wine, where respect for the living guides every gesture.

Here, wine is thought at the scale of the gesture: confidential yields, hand work and a patient ageing that lets the fruit express itself without artifice. Each cuvee is validated through tastings, until the right balance.

A natural, living viticulture, without compromise

On this preserved vineyard, there has been no tilling of the soil for more than 20 years and no chemical product is used. A spontaneous plant cover protects the rows, enriched with companion plants (fruit trees, aromatics, conifers). The vines, more than 50 years old and trained in cordon de Royat, are mainly Merlot (90%), complemented by Cabernet Franc. The harvest is done by hand, in small crates, with a precise densimetric sorting to keep only the best grapes.


An ageing tailored to each vintage

The estate uses a diversity of vessels for the ageing and carries out single-vessel ageing or blending depending on the vintages. The winemaker has 2 foudres of 10 hL in Austrian oak, 2 terracotta amphorae of 5 hL, 2 terracotta jars of 5 hL and 2 ceramic eggs of 2.5 hL. In the cellar, the approach is just as pure and respectful: natural fermentation with no added yeasts, short macerations guided by tasting, no additive or fining, spontaneous malolactic fermentation, and natural settling for a clear juice. Each step is designed to express the identity of the fruit, without artifice.

Thanks to an identical winemaking but a differentiated 18-month ageing, the estate offers three cuvees validated through tastings. Same plot, same grape: only the ageing vessel changes and signs each style.

La Dame

AOC Saint-Émilion - red (Merlot, Cabernet Franc)

The estate's flagship cuvee: fewer than 5000 bottles, a blend of the wines aged in foudres, amphorae and ceramic eggs. A rich, fruity nose, with notes of sweet spices and light tobacco; on the palate a frank, enveloping matter and an elegant, persistent finish.

Le Foudre

AOC Saint-Émilion - red, aged 100% in foudre

Made 100% from a 10 hL foudre, seasoned by previous vintages: light notes of nutmeg and brioche and a more generous frame on the palate. Here the oak stays subtle, accompanying the grape rather than overtaking it. Fewer than 1000 bottles produced.

La Jarre

AOC Saint-Émilion - red, aged in a terracotta jar

The estate's quintessence, aged in a 5 hL terracotta jar: fewer than 600 bottles per vintage. A velvet sensation on the palate and a delicate expression, ripe black fruits, thyme and dry herbs, with an all-softness finish.
