Domaine Vincent Wengier: The Pure Expression of Chablis, Between Precision and Respect for Nature
In the heart of the Chablis vineyard, in the village of Préhy, Domaine Vincent Wengier follows a clear vision of wine: letting the terroir speak, without artifice. For more than twenty years, Vincent and Sophie have worked their vines with rigor and humility, convinced that the quality of Chablis is born first in the soil and in the vineyard.
Today, the estate covers 28 hectares, spread across five emblematic Burgundy appellations: Chablis, Petit Chablis, Chablis Premier Cru, Bourgogne Chardonnay, Bourgogne Aligoté, and Bourgogne Pinot Noir.
An Exceptional Chablis Terroir
The vines grow on typical Chablis clay-limestone soils with a Kimmeridgian limestone subsoil, a geological signature recognized worldwide. This unique soil gives the wines their taut minerality, natural freshness, and the chalky texture that defines great Chablis.
The vines are planted in narrow rows, following Burgundy tradition, encouraging concentration and a precise expression of Chardonnay, the cornerstone of the estate’s white wines.
Sustainable Viticulture and Organic Commitment
Respect for the environment is central to the estate’s philosophy. The parcels are mechanically weeded four to five times per year, without chemical herbicides, in order to preserve soils and biodiversity.
The estate is certified HVE (High Environmental Value), an official recognition of its commitment to protecting flora, fauna, and the natural balance of the vineyard.
Since 2023, Domaine Vincent Wengier has also been certified Organic Farming. This first organic vintage reflects a deep conviction: producing sincere wines requires respect for living ecosystems.
Precise Winemaking in the Service of Purity
After carefully managed mechanical harvesting, the grapes are pressed quickly to preserve freshness and avoid oxidation. Pressing is carried out using low-pressure pneumatic presses, ensuring finesse and delicacy of the juice.
The musts are cold-settled, then fermented in temperature-controlled stainless steel tanks, exclusively with indigenous yeasts naturally present in the vineyard. Malolactic fermentation is carried out to bring roundness and balance to the wines.
The wines then rest for 8 to 10 months on fine lees, an aging process that enhances texture, develops aromatic complexity, and adds depth without masking the terroir.
Chablis Premier Cru “Vaillons”: From the Vaillons climat, with southeast exposure, this Chablis Premier Cru benefits from ideal morning sunlight and shallow soils rich in Kimmeridgian limestone. The wine shows a golden-yellow color, with aromas of white flowers and flint. The palate is round, elegant, and enveloping, with a charming style.
Recommended pairing: fish in sauce.
Chablis “Quintessence”: A parcel selection from old vines, this cuvée is vinified and aged entirely in 228-liter Burgundy barrels. Oak brings structure and complexity, revealing toasted hazelnut and vanilla aromas, while preserving Chablis freshness.
Chablis: A classic and precise Chablis, produced from vines around 40 years old on Kimmeridgian clay-limestone soils. Mineral, straight, and well-balanced, it pairs beautifully with fish, shellfish, white meats, and aged cheeses.
Petit Chablis: Located on the outskirts of the appellation, the Petit Chablis vines average 30 years of age and produce a lively, fresh, and very approachable wine. An expressive Chardonnay, ideal for shellfish, seafood, or as an aperitif.
Bourgogne Chardonnay: Produced from parcels located in Préhy, the only commune in the Chablis area authorized to use the Bourgogne appellation. This fresh and generous Chardonnay reflects the local terroir, with vines averaging 10 years of age.
Bourgogne Aligoté: The second great white grape variety of Burgundy, Aligoté here expresses freshness and liveliness. From vines around 15 years old, it is the perfect companion for aperitifs, barbecues, and convivial moments.
Bourgogne Pinot Noir: After a maceration of around twelve days with daily pump-overs, the wine is aged for about one year in Burgundy barrels. The nose reveals red fruit and sour cherry aromas, while the palate is generous and fresh, with supple, well-integrated tannins.
Recommended pairing: eggs in red wine sauce (œufs en meurette).
