Domaine Tour Saint Michel: A committed family story at the heart of Châteauneuf-du-Pape

Domaine Tour Saint Michel is прежде all a human adventure, rooted in time and carried by the same family since 1930. It all began with Michel Fabre, who acquired the first vineyard plots. His son Henri, supported by his wife Éliane, gradually developed the estate and gave it its current scale.

Since 2007, Mireille Fabre has embodied a new dynamic. Faithful to the family heritage, she has refined the estate’s wine style with sensitivity and precision. Her daughters, Magali and Mélanie, joined her in 2018 and 2023, ensuring a rare and valuable continuity. Today, the estate farms 55 hectares, including 30 hectares in the Châteauneuf-du-Pape AOC.

Châteauneuf-du-Pape: a sun-drenched and demanding terroir

The vineyards of Domaine Tour Saint Michel are located in the warmest and brightest part of Châteauneuf-du-Pape, in the southern sector of the appellation, on the famous rolled pebbles. These soils store heat during the day and release it at night, promoting optimal grape ripeness.

Historic parcels such as Les Gallimardes, Crouscroute, Petites Serres and Grand Coulet now stand alongside more northern sectors like Terres Blanches, Brusquières and Fargueirol, offering a wide diversity of expressions.

Grape varieties chosen for their natural balance

Out of the 13 grape varieties authorized in Châteauneuf-du-Pape, the estate works with seven, selected for their complementarity and their ability to faithfully express the terroir.

Red varieties: Grenache (generous and structuring), Syrah (elegant), Mourvèdre (deep), Cinsault (delicate)

White varieties: Grenache Blanc, Roussanne, Clairette

These blends give birth to wines that are sunny yet balanced, powerful without heaviness, and always clear in expression.

A clear and committed environmental approach

At Domaine Tour Saint Michel, respect for living ecosystems is not a slogan, but a daily practice. The vineyards are managed using sustainable farming methods, without chemical herbicides. Soils are worked mechanically with ploughs and adapted tools to preserve microbial life.

The estate is certified HVE Level 3 and fully committed to organic farming, with official organic certification obtained starting with the 2023 vintage. The goal is clear: harvest healthy, balanced grapes and allow the terroir to express itself freely.

In the cellar: revealing, not masking

The cellar has evolved over the years with one guiding principle: respect the grape and the wine.

Vinifications take place in stainless steel and concrete tanks, with precise temperature control. Oak is used sparingly; aging focuses on expressing the grape variety, the vintage and the place, rather than the influence of wood.

Each cuvée requires time, attention and patience. Nothing here is rushed.
