Domaine Passot: Excellence in Beaujolais Crus and Unique “Hors-Série” Wines
Located in the heart of the prestigious Beaujolais crus, between Lyon and Mâcon, Domaine Passot stretches across 12 hectares of vineyards in Chiroubles, one of the region’s most emblematic terroirs. This family-run estate, taken over in 2014 by Dominique and Rémy Passot after 25 years of management, welcomed their two children, Félix and Simon, in 2018, continuing a four-generation winemaking legacy.
Four Outstanding Crus and Original Cuvées
Domaine Passot carefully cultivates four major Beaujolais crus — Chiroubles, Fleurie, Morgon, and Régnié — alongside distinctive and creative “Hors-Série” cuvées. Since 2020, the estate has been certified High Environmental Value (HVE), a guarantee of sustainable and environmentally friendly practices.
A Family Story Rooted in Beaujolais
The story began in 1989, when Dominique and Rémy created the estate with just 5 hectares of vines. In 2017 and 2018, their sons Simon and Félix brought fresh energy, expanding the vineyard to 15 hectares. Together, they work meticulously to protect the richness of the soil and the authenticity of the grape varieties.
A Philosophy of Respect for the Land
Guided by the quote: “The Earth is not an inheritance from our parents, but a loan from our children,” the Passot family has restructured the vineyard with new plantings of 6,500 vines per hectare, gradually eliminating all chemical herbicides. In the cellar, winemaking is carried out with no added sulfites and indigenous yeasts to fully reveal the true expression of the terroir.
The Grape Varieties of Domaine Passot
Red and rosé wines are crafted from Gamay noir à jus blanc, the emblematic grape variety of Beaujolais, renowned for its fresh, fruity aromas. White wines are made from Viognier and Chardonnay, offering floral, fruity notes and a rich aromatic complexity.
Winemaking and Aging: A Precise Craft
All grapes are harvested by hand, involving a team of around twenty pickers. Depending on the vintage, grapes may be destemmed or left whole, with fermentation starting thanks to a natural pied de cuve, ensuring the uniqueness of each wine. Temperatures are carefully controlled, and pressing is performed with a pneumatic press to preserve the delicacy of the juice. Aging takes place in oak barrels, stainless steel vats, or concrete tanks, depending on the desired style.
