A respectful and reasoned viticulture
Domaine J&D defends a sustainable and environmentally respectful approach, convinced that a great wine can only be born from a healthy and living vine. The soils are nourished by natural composts, without chemical fertilisers or weedkillers. The vines, balanced and vigorous, produce concentrated and aromatic grapes, carefully selected for each cuvee.
The cellar, built in 2009, is equipped with modern tools allowing precise monitoring of the winemaking, while keeping traditional and artisanal methods. The ageing, lasting 6 to 18 months, takes place in vats or oak barrels, to preserve the identity of the fruit and the aromatic complexity of the wine.
An independent winegrower, artisan of the living
Since 2009, Domaine J&D proudly holds the Vigneron Independant label, a symbol of a fully controlled production, from the vine to the bottle. Each season, the family shapes its vines with passion:
Winter pruning in Cordon de Royat to preserve the vigour and balance of the vines.
Manual disbudding in spring for natural aeration and optimal ripeness.
Selective leaf-thinning to capture the light and prevent humidity.
Careful harvesting and inter-vine soil work favouring microbial life and biodiversity.
This constant attention makes it possible to preserve the natural balance of the vineyard, while favouring the pure expression of the Caromb terroir.
Soil work respectful of the land
The estate's lands are never forced: they are enriched with organic composts and naturally grassed to avoid erosion and nourish biodiversity. In winter, local plants flower between the rows, bringing a precious biological balance. Under the vines, mechanical weeding replaces chemical products: a strong ecological gesture, faithful to the estate's philosophy.
Winemaking: between science and intuition
Each grape is worked with the greatest respect for its typicity. The fermentations are conducted with precision to preserve the freshness and the aromatic expression of the fruit. The reds benefit from long macerations to extract silky tannins and an elegant structure, while the whites and roses favour purity and finesse. Barrel ageing refines the most complex wines, adding woody notes and a remarkable length on the palate.
