A family estate in Milly, at the gates of Chablis

Set in Milly (89800), a few minutes from Chablis, in the Yonne, the family estate covers 25 hectares. Four generations have followed one another, and today Jean-Luc Fourrey continues the story with passion, notably developing estate bottling to share the estate's identity more widely. Behind each cuvee, a team of seven people is present daily, in the vines, the cellar and the office: an agile, responsive estate, able to move forward even when the weather seriously complicates matters.

Sustainable viticulture, HVE, heading for organic

The management of the vineyard rests on a sustainable approach, attentive and deeply respectful of life: soils, vine, biodiversity, nothing is left to chance. A member of the Independent Winegrowers, the estate has been HVE-certified (High Environmental Value) since 2017 and its vineyard is converting to organic farming. It works actively on adapting to climate change: targeted grass cover, hedges, mechanical weeding, reduced inputs, anti-drift tools and innovative solutions to strengthen the vine's resilience.


Harvest and precision winemaking

Here, the plot decides: no fixed dogma, ripeness comes first. The harvest is manual for the young vines and the Grands Crus, and mechanical for the other plots, with high-performance equipment and on-board sorting. The goal is constant: to harvest at the precise moment when fruit and acidity are in balance. In the cellar, vinification is precise and low-intervention: most cuvees in temperature-controlled stainless-steel vats to preserve aromatic purity, ageing adapted to each vintage, and a few cuvees aged in amphorae or barrels, always with restraint.

The estate makes mainly white wines from Chardonnay, the beating heart of Chablis, and also produces a confidential Bourgogne Pinot Noir. Five climats with distinct identities, aged at length in vats (12 to 18 months): Cote de Lechet (mineral, straight, for keeping), Vaillons (ample, rich, saline finish), Mont de Milieu (elegant, floral, great persistence), Les Fourneaux (finesse, partial amphora ageing) and Fourchaume (expressive and seductive from its youth).

The estate's only red, from vines about ten kilometres from Chablis: crunchy red fruits, melted tannins, a supple and elegant palate. A red for pleasure, without losing the Burgundian spirit.

Vinification is precise and low-intervention: most cuvees in temperature-controlled stainless-steel vats to preserve aromatic purity, a few in amphorae or barrels, always with restraint. The estate has been HVE-certified since 2017 and is converting to organic farming.
