Domaine in Alsace – Organic & Biodynamic Wines at the Heart of the Grands Crus
Our Estate in the Heart of Alsace. Nestled at the foothills of the Vosges mountains, just 10 kilometers northwest of Colmar, our estate flourishes in Ammerschwihr — an exceptional wine village bathed in the first light of the rising sun.
Across 7 hectares, we cultivate some of the most remarkable terroirs in Alsace:
Grand Cru Kaefferkopf
Grand Cru Marckrain
Clos des Chats
Vogelgarten
Gneiss, limestone and marl soils, worked with precision, patience and respect.
Each parcel has its own voice.
Our role is simply to let it speak.
Our Philosophy: Respect for Life
When Etienne took over the estate in 1996, he made a decisive choice: immediate conversion to organic farming, followed by biodynamic practices.
Today we are certified: Ecocert (Organic Agriculture) et Demeter (Biodynamic Agriculture)
Why?
Because living soil produces living wine.
No unnecessary inputs.
No commercial yeasts.
No added sugar.
Fermentations begin naturally thanks to indigenous yeasts present on the grapes.
Wine is not manufactured.
It is guided.
Vineyard Work: Precision Above All
“Wine quality is decided in the vineyard.”
Every winter, pruning, tying and cane lowering are done by hand. These gestures determine:
grape quality
concentration
vine longevity
Harvesting is exclusively manual.
We seek balance, not performance.
The Cellar: Guiding, Not Transforming
Our cellar combines:
oak foudres from the 1950s
stainless steel tanks
Burgundian barrels
Fermentations last 3 to 6 months, naturally.
Aging on fine lees develops complexity and depth.
We taste. We observe. We wait.
The wine follows its own rhythm.
