Some winegrowers come to the vine through inheritance. Jean-François Moniot came to it through conviction, and through an inner logic so coherent that it gives his wines a rare direction. A vet for thirty years in alternative medicine, he saw in biodynamics not a trend but a natural extension of what he was already doing: caring for the living with the fewest artifices possible, and the greatest respect.

A 12th-century farm, a vet and a philosophy: the story of L'Entre Deux Mondes

It all begins in 1989, when Jean-François Moniot acquires a former 12th-century fortified farm in Villegouge, in the heart of the Fronsadais slopes. For years, the property remains separated from its land. In 2004, land consolidation changes everything: the farm recovers the plots that had surrounded it for centuries, and the wine adventure can begin. The village elders still remember it, these lands once gave an excellent wine.

Jean-François is not a trained winegrower. He is a vet, a practitioner of osteopathy and of alternative and complementary medicine, and the founder, in 1999, of the Libourne Organic and Craft Fair. When he takes on his first vines, organic farming imposes itself as an obvious choice, not a constraint. It is simply the logical extension of a whole life devoted to respect for the living.

As for the name, L'Entre Deux Mondes (Between Two Worlds), it points to something deeper than the simple vet/winegrower duality. It is a journey between the telluric world and the cosmic world, between the physical and the energetic, between the material and the spiritual. Man in between. A philosophy that runs through every gesture, in the cellar as in the vineyard.

A clay-limestone terroir over underground quarries, at the gates of Pomerol and Saint-Émilion

The L'Entre Deux Mondes estate sits on the Fronsadais slopes, in Villegouge, about twenty minutes from Bordeaux and Libourne. It is a remarkable geological crossroads: Pomerol to the north, Saint-Émilion to the east, Fronsac to the west. Between these three prestigious appellations, this small 4-hectare vineyard grows a singular clay-limestone, resting on underground quarries that naturally drain the roots and force them to search far for the minerals they need.

The vines are planted across several generations. The oldest date from 1958, they are now more than 60 years old. The next were planted in the 1970s, then in 1988/89 and finally in 1997. This mix of generations is found in the glass: the depth and concentration of the old vines, the liveliness and fruit of the younger ones.

The grape mix is classically Bordeaux, dominated by Merlot (80 to 85%) which expresses itself with elegance on these limestone soils, complemented by Cabernet-Sauvignon (15 to 20%) which brings structure, firm tannins and ageing potential. The two slopes were designed to optimise the exposures: north-south for the Merlots, east-west for the Cabernets.


Demeter biodynamics: caring for the vine as you care for a living being

Biodynamics here is not a commercial argument. It is a daily practice, coherent with a whole life's journey. Jean-François carries out all the treatments and applications in the vineyard himself, no service provider, no subcontractor. The Demeter certification, obtained in 2016, is the most demanding of all the world's biodynamic certifications: it goes well beyond the European Organic Agriculture specifications.

In the vines, no fertiliser, no compost. Interventions are limited to controlled grassing (every other row), to the application of herbal teas and plant slurries gathered locally, to essential oil, and to the biodynamic preparations, horn manure (preparation 500, to stimulate soil life) and horn silica (preparation 501, to strengthen photosynthesis and aromatic concentration). Only minimal doses of Bordeaux mixture and sulfur complete the picture, as a last-resort protection.

The rest is a matter of care: mechanical work under the row, gentle manual topping, removal of side shoots, leaf-thinning on the rising-sun side to favour aromatic ripeness. Many diverse hedges surround the estate. Late mowing is the rule, letting insects and small animals find shelter. Even the spiders are systematically spared and returned to nature.


Natural winemaking: indigenous yeasts, zero inputs, the rest is the grape

The harvest is manual, of course, with a double sorting: first on the vine in the rows, then on a table at the cellar entrance. Only the finest berries enter the vat room. This level of demand at the entry is the essential condition for winemaking without inputs.

In the cellar, installed on the property in 2016, with a new temperature-controlled vat room and a small barrel cellar, the philosophy remains the same as in the vineyard: no inputs, no additives. Fermentation takes place with the sole indigenous yeasts present on the grapes. A hot post-fermentation maceration is generally used to extract matter and polyphenols gently. The malolactic fermentation happens naturally, sometimes late, in tank or in barrel.

Ageing is mixed: part in stainless-steel tanks, part in barrels (second-fill barrels and new Burgundy barrels depending on the cuvée). Bottling is done without filtration, or almost, with the least intervention possible, right to the end.
