Domaine Dambrun: AOC Ventoux - Caromb, Vaucluse

At the foot of Mont Ventoux, between limestone and sand, people who came from elsewhere planted their values in the Vaucluse. Patrick Chêne, a former Parisian media professional, and Normand Lavoie, who arrived from Quebec, together farm 18 certified-organic hectares to produce wines of complexity, balance and elegance, wines that breathe rather than overpower.

History and origins of the estate

After a fulfilling career in the Parisian world of media and patisserie, Patrick Chêne and his wife Laurence decided in 2014 to start over, from the roots up. They settled in Caromb, at the heart of the Ventoux, and founded Domaine Dambrun. Within ten years, the wines had found their place on some of the finest tables in France, and the estate had become one of the reference points of the Ventoux appellation.

It was the quality of those wines, and the beauty of the place, that drew in Normand Lavoie, who had left his native Quebec for Provence. He proposed to Patrick a partnership to take the project further. Together they built a new tasting cellar and acquired six additional hectares. A second chapter, driven by two personalities who seemed worlds apart yet found themselves united around exactly the same ambition.

The estate's philosophy

To benefit from exceptional sunshine and terroir, and yet resist the temptation of wines that are too powerful or too solar. The ambition at Dambrun: to sublimate the expression of the Ventoux with wines that are complex, balanced and elegant, vinified in small volumes, with as little intervention as possible.


The terroir and its unique character

Mont Ventoux is more than a Provençal landmark. For the winemakers who work at its feet, it is above all a UNESCO Biosphere Reserve, an internationally protected natural territory that imposes its own ethic, its own way of farming, and lends the wines produced within its area a strong, instantly recognisable geographical identity.

The Dambrun vineyards sit on clay-limestone and sandy-loam soils, at altitudes ranging from 100 to 450 metres. This vertical spread is a rare asset: it creates differentiated ripening conditions across plots, cool nights that preserve aromatic freshness, and a natural diversity that expresses itself in every blend. The 18 hectares under cultivation, with an average vine age of 30 years, form a coherent and complementary mosaic.

Working the vines and our commitments

Certified Organic (European label), Domaine Dambrun practises chemical-free viticulture and the least interventionist approach possible in the winery. Harvests are carried out by hand, in small baskets and crates, to preserve the integrity of the fruit from vine to cellar. A double sorting takes place, first in the vineyard at picking, then again on arrival at the winery, to retain only perfectly healthy grapes.

Winemaking follows an absolute respect for the fruit. First fermentations take place without additions, using the indigenous yeasts naturally present on the organic grapes, in truncated wooden vats that allow gentle, precise management. The estate favours gravity-fed movements and uses a low-pressure pneumatic press. No aggressive pumping, no forced extraction: the wine comes slowly, on its own terms.

Ageing lasts from 12 to 35 months depending on the cuvée, in carefully chosen vessels: demi-muids and foudres for refined oak influence, concrete for minerality, stainless steel 316 for aromatic freshness. Bottling is carried out at the estate, with Sagrera fleur de liège corks. A level of care that extends to the very last step before the bottle leaves the cellar.


Grape varieties and appellations

The red wines are produced under the AOC Ventoux appellation. The whites fall under IGP Vaucluse, a deliberate choice that allows Chardonnay to be freely incorporated into the white blends: an unexpected grape in this landscape, but one that adds aromatic richness and original depth that traditional varieties alone could not achieve.

The range of grape varieties cultivated is one of the broadest in the Vaucluse. For the reds and rosés: Syrah, Grenache, Cinsault, Carignan and Counoise, the five great southern varieties that, across diverse soils and altitudes, find a particularly nuanced expression here. For the whites: Chardonnay, Grenache Blanc, Viognier, Roussanne and Marsanne, an aromatic blend that surprises and convinces at every tasting.


The wine style

This Provençal appellation could easily produce wines that the sun renders heavy and overwhelming. That is precisely what Dambrun refuses. Thanks to elevated plots, cool nights, organic farming that allows each variety to express itself without forcing, and gravity-fed winemaking that preserves the natural texture of the grapes, the estate's wines are precise, digestible, with a beautiful aromatic tension.

The reds have depth without heaviness, silky tannins that invite the table. The whites astonish with their freshness and complexity in a region not typically associated with great whites. Every wine is vinified and aged in small volumes, a commitment to quality that is felt from the very first sip.


What you will only find at Domaine Dambrun

Chardonnay whites from the Ventoux. The IGP Vaucluse choice for whites is not an administrative detour, it is a creative freedom. By growing Chardonnay on the Ventoux hillsides, Dambrun produces whites that have no equivalent in the appellation: complex, fresh, with a mineral quality that surprises and convinces.

Ageing from 12 to 35 months in multiple vessel types. Demi-muids, foudres, concrete, stainless steel 316, the estate selects the vessel best suited to each cuvée, to reveal its character rather than homogenise it. A level of precision that is rare for an appellation of this size.

Indigenous yeasts, always. No additions during fermentation, the yeasts naturally present on the organic grapes do the work. This demanding choice is technically riskier but produces slower, more expressive fermentations and wines that carry a depth of character that technique alone cannot manufacture.

A Ventoux at altitude, not on the plain. The vertical spread of the plots, from 100 to 450 metres, gives the wines a structural freshness that few estates in the Vaucluse can claim. This is not a stylistic choice: it is the geography speaking.
