A Friendship Turned Artisan Adventure. Breizh’Cool is, above all, a story of friendship and passion. Founded in 2016 in Acigné, near Rennes, the distillery was born from three friends — Cédric, Florian, and Xavier — united since their school days and driven by a shared curiosity for flavors and aromas. Their bond gave rise to a common goal: to create exceptional organic Breton spirits, crafted locally with rare artisanal precision.

A Breton Distillery with Authentic Expertise

Each Breizh’Cool bottle is the result of precision, patience, and experimentation. The three founders design, distill, bottle, and market their creations themselves, guided by independence and transparency. All bottles are made from 80% recycled glass — an eco-conscious choice that reflects their philosophy: respect nature, celebrate Brittany, and elevate botanicals.

Fermentation – The Foundation of Character

It all begins with organic cane molasses from Paraguay, rich in sugar and sustainably sourced. Fermentation, lasting at least 13 days, develops a complex aromatic palette — the base of Breizh’Cool’s unique rum profile.

Distillation – The Copper Alchemy

The founders use traditional copper stills of 600 and 150 liters for slow, controlled distillation. Only the heart of the distillate is kept, ensuring a pure, balanced, and aromatic spirit. This artisanal process, combined with precise rectification, gives each spirit its distinctive aroma and flavor signature.

Aging – The Wisdom of Time

The rums are aged in oak barrels previously used for Breton whisky or Sauternes, adding roundness and complexity. Under the Breton climate and the warmth of the stills, the famous “angels’ share” reaches about 6% — proof of natural evaporation and authentic maturation.

Steam Extraction – The Purity of Aromas

For gins, pastis, and liqueurs, Breizh’Cool uses a rare method: alcohol steam extraction. Inspired by essential oil distillation, it captures only the aromatic molecules of the botanicals, without altering or coloring them. The result: spirits of unparalleled purity, expressiveness, and balance.
